If you are looking for meats for Christmas, our meats can be frozen and thawed out once after smoking. We will send you home with smoked Wagyu fat or lard to add so that when reheated, your meats come out just as juicy as if they were fresh off the pit.

Did you know that smoking meat is more about going by what you feel and see than following a recipe or a set of directions?
Further, every smoker or bbq pit has “hot spots” so knowing your pit is critical!
Look at the difference in these pork butts. They are all within 1 pound of each other and have had the same prep but because of their position on the pit, they are not getting the same bark results.
It is at this point in the day that our resident smoker, Ryan, has to make a judgment call. He determined that one needs more direct heat than it’s getting so he has to reposition and rotate the pork butts in order to achieve our desired results!
Now taking orders for Saturday, December 5th, pickup! These beautiful slow-smoked pork butts are $45 for pickup in Flour Bluff or $50 delivered in the Corpus area. The pork butts average between 8 and 11 pounds and they can feed around 10-12 people (depending on how hungry you are)!
