We have a new smoked chicken enchilada with poblano crema that came out of this weekend. We can't wait to put it on the menu.

So much fun making this spread for a retro cocktail party last night!
Last week was such a whirlwind! I wish I would have documented more of the process for these sous vide carnitas tacos. I will post more about them soon, but I just had to share because they turned out so good. I made blue corn tortillas, stuffed them with the carnitas (after broiling) and topped them with mild white onion, cilantro and queso fresco. Had half of a leftover avocado and a bag of chopped fresh pineapple on hand, added some tomato & lime and served it with left over charro beans from the restaurant and my momma's habanero salsa. Everything turned out great. 10/10 will do them again. I think this would make a great family meal with all the fresh accompaniments and all told, it wouldn't be that expensive per plate for all that you get. I wish I could have found my other studio light and had gotten a better video, but I still plan to post the recipe in the coming days.I hope you all are having a lovely weekend! π
