There are soooo many ways to cook a noodle soup or stew but one of the important part is choosing noodle type and timing. Timing here encompasses cooking time, in the bowl time or soaking time and eating time.

One such example is like soba or ramen. If left too long in the broth, it can get soggy and looses its texture. So choosing the right noodle for the right dish can be critical or your intended method of serving the noodle dish.

In this dish of mine, I had used glass noodle and cooked in a mild curry stew but I introduce the noodle quick in the stew do that it still has texture and it is relatively quick getting cooked to its intended texture.

Try experimenting with different noodles by keeping your timing on a dish and test to see the difference. You'll be surprise!!

This pork belly dish was usually done during certain celebration. In many aspects, it’s savory taste and vibrancy signifies celebration of life and joy.

Before we offer you with the best dishes, our task is to travel the world and learn the authentic dishes and cooking technic. This restaurant is in Bilbao, Spain and one of the dishes that they offer is this flavorful pan seared local shrimp in olive oil and sea salt.

It is interesting to know how such a simple cooking style can show case this dish. But it is also to note that this can only be done knowing not just of fresh ingredients but also it source. Clean environment, no preservatives and good feed.

Shishamo or “smelt” are tasty snacks with west coast IPA, sangria or some light body dry finish Cabernet. Just coat them with sea salt and olive oil then straight over hot coals. If you get them in season, they have a roe sack that’s really tasty!!

These are typically eaten whole, from head to tail. Give it a try.

Have you ever grilled sardines? Sometimes the challenge is keeping them in one piece instead or meat and skin breaking apart. Usually just by testing one first and knowing it’s fat content should indicate if you need to toss them in some oil first. Fire or heat is also another factor. Typically, should not have consistent flames but the occasional small flash flames from the oil drippings are ok. Now you can give it a try. No marinade needed, just some course sea salt and really fresh sardines is all you need!!

Summer’s here and it’s awesome seafood season. When I was growing up, my mom usually goes the the wet market / fish monger to get the freshest seafood by closely looking at the items being bought. There’s a certain shine on fish or crustaceans besides looking at the eyes and gills for fish, shell for shrimp and firmness of the meat. This ensures the best tasting seafood especially when cooking by steam or simply boil. Just some tricks that I learned along the way with practice.
