My passion for cooking started when I became a wife and mother. Even though I did read out loud to my family recipes on cereal boxes when I was a kid, they loved that, not, lol. I started with easy guide cookbooks and loved the ones with pictures. Sharing how to make the dish and how is it supposed to turn out is important. My first nemesis was white gravy, I finally learned from a wonderful book

, "White Trash Cooking". I enjoy cooking and people have enjoyed my meals for over 25 years. I have been asked to open a restaraunt numerous times, it is still on my mmind but I am starting to share my recipes here on this page. If you have questions or comments let me know. Making a completely different dish from “leftovers” to me is rewarding. 😉
I had taco meat and charro beans from our taco night and some fresh zucchini.
Then comes the idea of…

Stuffed Mexican Zucchini Boats

Ingredients

4 medium zucchini
salt and pepper to taste
2 teaspoons olive oil
2 cups taco meat filling with or without beans
3/4 cup shredded mozzarella cheese or anybtype you like, I used gruyere
1 tablespoon chopped cilantro
Cooking spray

INSTRUCTIONS

Preheat the oven to 400 degrees F. Coat a large rectangular baking with with cooking spray.
Cut the zucchini in half lengthwise, then trim off the stem ends. Use a spoon to carefully scoop the flesh out of the zucchinis.
Coat lightly the zucchini with olive oil and salt and pepper over the zucchini shells. Arrange the zucchini in the baking dish.

Spoon the taco filling meat mixture evenly into the zucchini shells, then top with the shredded cheese.
Bake for about 20 minutes. Sprinkle with chopped cilantro, serve and enjoy!

Caprese Stuffed portobello mushrooms

These are first brushed with homemade Italian dressing and broiled. Then topped with tomato and cheese. Broiled until melted. Garnish with fresh basil and a little drizzle of the dressing.

Thai Laab (Larb) Salad

This dish is the salad of ground meat from northeastern Thailand. The flavours of laab is fresh, bright and spicy. Super Thai food beginner-friendly and very quick and easy to make!

I grew up eating this wonderful dish!

Ingredients
1.5 Tbsp jasmine rice
2 Tbsp water
1 lb ground pork (or any ground meat too!)
3 Tbsp finely sliced shallot
¼ cup mint leaves, rough chopped if leaves are large
2 Tbsp chopped cilantro
2 green onions chopped
2-3 leaves sawtooth coriander, rough chopped
2 Tbsp fish sauce
2 Tbsp lime juice
1-2 teaspoon chili flakes, or to taste

Instructions

Make toasted rice powder: Put jasmine rice in a dry sauté pan and cook over medium high heat, moving it constantly, until a deep brown colour develops. Grind with a coffee grinder or in a mortar and pestle into a sand-like texture.

In a medium pot, add the water and bring to a boil over high heat. Then add the ground pork and stir to break it up until it is fully cooked. Remove from the heat.

Using the pot as your mixing bowl, add shallots into the pork and stir to break up the rings and lightly wilt the shallots.

Add the fish sauce, lime juice, 1.5 tablespoon of the toasted ground rice, and the chili flakes and stir to mix. Then add the fresh herb: cilantro, sawtooth coriander (if using), green onions and mint.

Taste and adjust to your liking with more fish sauce and lime juice as needed. If it feels a little too salty or acidic, you can add a pinch of sugar to help balance the salt and the acid.

Feel free to garnish with some mint leaves and fried dried chilies. Serve with some fresh crunchy vegetables and sticky rice.

Chicken Enchilada Casserole

This casserole is truly a Mexican flare comfort dish.
It is versatile from easy to more homemade.
Easy-purchase a rotisserie chicken or even 3 cups of chicken meat. Then store purchased enchilada sauce. Easy to put together and delicious to eat!

More difficult or time consuming cook/bake/roast a chicken and debone. Homemade enchilada sauce. I have posted mine, easy and wonderful.

Ok now for the recipe

3 cups cooked shredded chicken
1/2 teaspoon salt
1/2 teaspoon black pepper
6 ounces diced green chiles
10-12 corn tortillas (6 inches)
3 cups shredded colby jack cheese freshly grated melts better
2 cups approximately enchilada sauce

Directions

Pour 1/2 cup of the enchilada sauce in the bottom of the prepared baking dish. Pour a good 1/2 cup of enchilada sauce into the chicken mixture.
Dip 6 tortillas in the remaining sauce to coat them and line the bottom of the casserole dish with them.
Divide the chicken mixture in half, and add half of it to the top the tortillas in the pan. Top with 1 cup of cheese.

Dip the remaining 6 tortillas in the enchilada sauce and top with the remaining chicken mixture. Pour any remaining sauce over the casserole and top with 2 cups of colby jack cheese.
Bake 350 uncovered for 25 minutes or until the cheese is bubbly

Ingredients
1 16 oz can refried beans, or 2 cups homemade
1 10 oz can diced tomatoes with green chiles
1 to 2 tbsp taco seasoning
3 medium avocados
1 lime, juiced (about 1 1/2 tbsp)
1/4 cup cilantro, chopped
1/2 tsp garlic salt
1/4-1/2 cup sour cream
1 cup cheddar cheese
1/3 cup black olives, sliced
3/4 cup Roma tomatoes, diced
1/3 cup green or red onions diced

Instructions
Combine the refried beans, rotel diced tomatoes and taco seasoning in a bowl and stir until combined. Spread into an even layer in a 8x8 casserole dish.
In a separate bowl combine the avocado, lime juice, cilantro and garlic salt. Mash until desired consistency is reached and then spread into an even layer over the beans.
Stir the sour cream until nice and smooth, then spread into an even layer over the guacamole or just in the middle
Sprinkle the shredded cheese over the top of the sour cream, then top with the diced tomatoes, black olives and onions.
Cover with plastic wrap and keep chilled until ready to serve.

This is 2 ingredients (without the toppings)

Lemon Angelfood Cake

Ingredients

16 ounces angel food cake *just add water variety- do not add water
21 ounces lemon pie filling

Instructions
Adjust the oven rack to the center position and preheat your oven to 350 degrees F.
Grease a 9 x 13 baking dish with nonstick baking spray and set aside.
In a large bowl, add cake mix & the full can of lemon pie filling. Using a whisk, gently mix with just the tip of the whisk to avoid the powder from getting all over. Once the mixture begins to combine, use the full whisk and beat until fluffy and combined.

Pour mixture into the pan, and bake for 30-33 minutes. The top will be fluffy, and cracked, but will slightly sink as it cools.
Allow cake to cool for 15 minutes before slicing & enjoy!

Top with berries,powdered sugar and Dollop of whipped cream!

Deviled Ham Spread is easy to make and it turns leftover ham into a tasty treat that's delicious inside pita bread, cracker or stuffed into celery!

Deviled Ham Spread

INGREDIENTS
1 lb. coarsely chopped ham
2/3 cup mayo
2 T Dijon mustard
1 T horseradish
2 tsp. Worcestershire sauce
2 tsp. Tabasco Sauce (or other hot sauce of your choice)
1/2 cup finely chopped onion or green onion
1/2 cup finely chopped pickles


INSTRUCTIONS
Whether you are using leftover ham or a ham steak, trim ham well if there is any visible fat or rind.
Then cut the ham into small cubes and add to the food processor with the steel blade.
Chop up the onion and pickles,
Remove ham from the food processor into a bowl and add mayo, Dijon mustard, horseradish, Worcestershire sauce, Tabasco, chopped onion, chopped pickles.
Stir ingredients together until they are all combined.
You can also add the other ingredients to the food process and pulse a few times to mix well.
Serve ham spread as a filling for Pita Bread, stuffed into celery, as an appetizer inside cucumber slices, or with crackers.
This will keep in the fridge for at least a week. (It probably lasts longer than that but I haven't ever managed to have any left after a week to see how much longer it will stay good!)Enjoy!

Use the Hot Honey for this wonderful dish!

Asian Honey Chicken

So so easy and tastes like you ordered take in.

5-6 boneless skinless chicken thighs
1/4 cup light soy sauce
1/2 cup honey
1 tbl Housin sauce
1 tbl red pepper paste
4 minced garlic cloves
1 tbl minced ginger
1/2 cup cold water
2 tbl corn starch
1 tsp toasted sesame seeds
1-2 tbl chives
Cooked rice

Directions
Place all your ingredients up to and including the ginger in the slow cooker. High 4 hours or slow 6 hours. Remove chicken, set aside. Turn on high heat. Add water mixed with corn starch. Heat until
thickened. Return chicken stir to coat. Serve garnished with sesame seeds and green onions. Enjoy!

Goat Cheese Asparagus Flatbread

A wonderful appetizer or snack to celebrate Spring and a delicious addition to your Easter menu

ingredients
1 flatbread
1/4 cup chèvre cheese
12 fresh Asparagus spears
1/4-1/2 cup white onion
garlic powder
Olivia oil
Salt and pepper
Hot Honey

Directions
Spray olive oil on the bread and sprinkle with garlic powder.
Broil a few minutes in oven. Slice onion thin, trim asparagus’ tough ends, toss onion and asparagus with a little olive oil and salt and pepper, microwave about 3-4 minutes, you want a bite but not raw.
Spread cheese over warm flatbread, sprinkle onion over the cheese and line up the spears on top of the onions. Broil for 5 minutes.
Remove and drizzle with the hot honey and cut into angles and or squares. of course enjoy!
