Making a completely different dish from “leftovers” to me is rewarding. 😉
I had taco meat and charro beans from our taco night and some fresh zucchini.
Then comes the idea of…
Stuffed Mexican Zucchini Boats
Ingredients
4 medium zucchini
salt and pepper to taste
2 teaspoons olive oil
2 cups taco meat filling with or without beans
3/4 cup shredded mozzarella cheese or anybtype you like, I used gruyere
1 tablespoon chopped cilantro
Cooking spray
INSTRUCTIONS
Preheat the oven to 400 degrees F. Coat a large rectangular baking with with cooking spray.
Cut the zucchini in half lengthwise, then trim off the stem ends. Use a spoon to carefully scoop the flesh out of the zucchinis.
Coat lightly the zucchini with olive oil and salt and pepper over the zucchini shells. Arrange the zucchini in the baking dish.
Spoon the taco filling meat mixture evenly into the zucchini shells, then top with the shredded cheese.
Bake for about 20 minutes. Sprinkle with chopped cilantro, serve and enjoy!
