Pumpkin seed Mole with chicken & pumpkin meat

Shredded Pumpkin bake smothered in marinara, basil, & mozzarella
The two key things you need to know
Pumpkin seeds: rinse throughoughly and dry on an even layer on paper towels. Toss with seasonings & a little oil/fat (bacon fat is awesome) Bake at 300 until they start to pop (about 25 mins)
Pumpkin meat: cut pumpkin in half width ways, remove seed & guts. Place upside down on a baking tray and bake at 250 until tender (about 1.5 hours)
