I am making chicken and dumplings for my mom today. I substitute chicken bouillon for the salt in the recipe for the dumplings. I like the flat dumplings so I rolled them out.
2 cups of all purpose flour
1/2 stick of grated cold butter
2 tsp of baking powder
1 tsp chicken bouillon powder the original recipe has 1/2 tsp salt.
1 tsp black pepper not in the original recipe
I cup of cold whole milk.
I mix all dry ingredients and put in the freezer for 10 minutes to make sure the butter is cold
Then add the cold milk and mix to bring the dough together. Flour the surface and roll out your dough 1/4 inch and cut in equal pieces. Stew your chicken pieces in chicken stock with onion celery salt and pepper until tender. Remove the cooked chicken and add in your dumplings and make sure your broth is at a rolling boil before adding your dumplings so they won’t stick. Add 1/2 cups of heavy cream and 2 tablespoons of butter then add your chicken to the pot and cook for 5 minutes on low. I love chicken and dumplings with cornbread . ENJOY!
