Chef Gard Manger Elizabeth Garcia

The esteemed French Chef Auguste Escoffier invented a system called the Brigade de Cuisine that created a hierarchy for all staff positions in the kitchen. Most kitchens today still use a system based on Escoffier’s ideas. One of these positions is the garde manger (French for "keeper of the food"), which is a cool area where cold dishes such as salads, hors oeuvres, canapés, cheeses, desserts, etc. are prepared and other foods are stored under refrigeration. The person in charge of this area is known as the Chef Garde Manger. One of PCC's Chef Garde Mangers is Elizabeth Garcia, who has a special talent for creating elaborate food displays and garnishes out of produce. Her "art" can often be seen on our cheese displays and always delights our members. She can create a swan from an apple, and often uses potatoes, pineapple, and other fruits for her flowers. We're proud to have Elizabeth on our staff to help add an artistic element to our food presentations!
