It's a new year and you are looking forward to being organized, focused and ahead of the rush. I figure there is no better time than now to discuss logistics as we delve back into the road to securing the right caterer for you.

Logistics are pivotal in ensuring the success of your event, special occasion, or festivities. When considering hiring someone to provide you with services, ensuring they are up for the task is paramount. There are various options to consider when selecting a food service provider/caterer.

"Pick-up" Option: This entails picking up the food directly from your vendor. Typically, it comes in disposable containers, and you receive little more than the food you ordered.

"Drop-off" Catering: Similar to pick-up, the vendor prepares your food in disposable containers, such as aluminum steam pans. You may have the option to receive wire steam pan holders, sterno fuel, and serving utensils. Some vendors go the extra mile, finishing dishes with garnish for presentation. Others offer drop-off options with rentals of stainless steel chafing warmers and additional display choices to elevate your service. These are details we'd discuss during your consultation.

Full-Service Catering: Depending on your event's size and occasion, this includes waitstaff, bartenders (as needed), table set-up and breakdown, dish service (washing and putting away), and sometimes decor.

Regardless of your chosen service level, rest assured that a significant amount of work happens in advance and behind the scenes for your event. Often, there are more staff members involved than those visible on the day of the event.

Taking the time to connect with your potential vendor is crucial to ensure they are fully equipped to handle your needs. Service and hospitality are the backbone of our business. I’m a chef who loves working at her craft. I’m always learning, reading and filling my kit with new ways to bring mouthwatering dishes to your table. One of the things I love most is layering flavors.

Cooking is about bringing out the complexity of flavor and subtle nuances in the ingredients of your dish. Please do not be afraid of seasoning!

Seasoning is your friend!

Salt is your friend!

Fat is your friend!

Spice is your friend!

Acid is your friend!

My fondest memories of the Christmas holiday season are centered around times I spent with my Grandmother and Aunt making chex mix and baking cookies.

While I am an "OG" chex mix fan I've really enjoyed making this version of Raindeer snack mix. It's super easy to mix and so fun and colorful with the holiday M&M's and sprinkles. You can stick to one variety of Chex cereal, Corn, or whatever your favorite is. My favorite is the Honeynut right now and it pairs perfectly with this recipe.

Did you know that I started my career in food as a cookie and treat maker? I started out 15 years ago and over time I moved from baking drop cookies (chocolate chip) to custom sugar cookie artist.

I absolutly love cookies!! As a matter of fact, I love cookies more than cake. I think it's the nostalgia. for me. The memories of baking with my Grandmothers and mother and aunt during the hoidays that have fueled my joy for holiday cookie making.

As a result I have teamed up with Madelyn Collins and created a hands-on interactive cookie workshop on December 16th. Take a few hours out of your day to come and celebrate you and spark your joy for holiday cookies with this private cookie swap/workshop.

I would like to thank you for supporting me, Chef Rosilind Renee in this year's competition for Favorite Chef. Your participation and champion votes aided the James Beard Foundation in their mission to create a more equitable and sustainable future in the restaurant industry through annual awards, industry and community-focused initiatives and programs, advocacy, partnerships, and national events.

On a personal level I want to say that your support for me truly was amazing and heartwarming. I never would have gotten all the way to the Quarterfinals without you. There is the dictotionary definition of hospitality and then there is the real meaning of hospitality.

"Hospitality means receiving and entertaining guests in a way that makes them feel well taken care of. It leverages ambiance, service and products or amenities to provide guests with the best experience possible." That is my goal when it comes to the level of service I provide my clients who often become friends. When you become a part of the Left Handed Baker and Beyond family either through our catering with Chef Rosilind or education or events just know the ulitimate goal is to give you something that exceeds your expectations and makes you feel taken care of.

There is a line in the show The Bear that discusses the reason hospitality & hospital have the same root word, they are both about taking care of people.

My grandmother's loved to cook, both of them. They were the kind of women who entertained, had multipe sets of china and glassware and truly were the epitome of hospitality. As a child I would watch from a distance as they prepared for parties and holiday dinners. I wanted to absorb every ounce of grace and elegance I saw unfolding before my eyes.

As I got older I would help were I was allowed and really began falling in love with the spirit of hospitality. I often struggle at times with embracing myself as a chef but, being a chef is more than the sum of our recipes. Being a chef to me is being consumed with the little details. Being a chef to me is making every second count. Being a chef to me is anticipating what people want before they even ask for it. Being a chef to me is also being all about hospitality.

If you have ever enjoyed a meal from me please do me a favor and leave me a message letting me know how it made you feel. I'm always striving to be better but I also aspire to live in this moment.
