Cold rainy day in Dallas so I have been cooking for the week. Big pot of Jambalaya ready for dinner tonight. The ham & bean soup still cooking. Next ham and augratin potatoes. 😊
Helped someone with a baby shower yesterday for 32. Baked chicken, mashed potatoes w/white gravy, green beans, Mac & cheese, asparagus and rolls, sit down served dinner. Did a charcuterie tray to start. Thank you Bob, Maritza and Samantha for all the help! I forgot to take pictures of the food before we served dinner, this is what was left!! 🤣.
Noodles w/veggies, chicken and peanuts to seed in a sweet spicy peanut sauce
For dinner tonight I made Noodles, veggies and chicken in a spicy sweet peanut sauce. Cleaned out fridge and pulled out lots of stuff from the pantry to make the sauce. 😋
Did food for another reception today. She was a very good friend of my mother-in-law. 😢🙏🏻🙏🏻
Cheesy Corn & Bacon Chowder
2 tbsp Oil
2 tbsp butter
1 onion, diced
1 each Green, Red & Orange Bell pepper, diced
4 garlic cloves, minced
Cumin
Chili powder
Salt & Pepper
1/3 cup flour
2 qts chicken stock
8 cups corn (I used frozen)
1 qt. Half & Half
4-6 cups shredded cheese (I used cheddar & cheddar jack). Any cheese you like that melts, pepper jack is good.
Prep the veggies.
In a large heated pot, add the butter and oil. Add in the onions, peppers and garlic. Cook & stir over med high heat until veggies are soft. Add in all the spices to your taste. Stir to combine and cook a few minutes to release flavors.
Sprinkle flour over veggies and stir to combine and cook 2 minutes to cook out flour taste. Add in the chicken stock, stir to combine. Next add in the corn, stir to combine. Add in the half & half. Reduce heat and let simmer for 10-15 minutes. Add in the cheese stir and simmer to melt. Serve in bowl or bread bowl.
You can change spices to your taste. If you want gluten free omit flour and make cornstarch slurry.
Had a big pkg. of hamburger meat to cook up. Hamburger Steaks in a spicy onion fire roasted tomato gravy. Will go with mashed potatoes and green beans. By request. 😊
