Southern Peach Pudding Cake

(Inspired by my grandfather, Herman FitzGerald)
Growing up, my grandaddy was quite the baker , anytime he wanted something sweet he would whip out the cast iron skillet or the cake pan and scratch up a one layer “pudding”, as he called them, topped with peaches and drizzled with glaze.
I can still remember that taste some 20 years later .
