“Build your own” buffets are not usually our thing because we typically need to get a large number of guests through the line in a short amount of time. Since Lighthouse Acres Ministries, Inc. Mom Prom was all about the party, it was a great setup for them. Our culinary and front of house team members turned sandwiches into an event.

Maple Cinnamon Whiskey Sour
Here's a Thanksgiving cocktail to enjoy after all the dishes are done...a Maple Cinnamon Whiskey Sour. You'll need:
1.5 oz (3 Tablespoons) bourbon
1 oz (1 Tablespoon) fresh lemon juice
2 to 4 teaspoons maple syrup
Pinch of ground cinnamon
Ice

2 8-oz blocks of cream cheese, softened
2 cups chopped pecans, divided
8 oz can crushed pineapple, drained really well
1 green onion
1 bell pepper
1 t. seasoned salt
Reserve 1 cup of chopped pecans. Combine all other ingredients using a mixer. Form cheese mixture into a ball and roll in reserved pecans. Wrap in plastic wrap and store in the refrigerator until ready to serve. Serve with crackers such as Triscuits or Wheat Thins. Enjoy!
