We are officially opening up crawfish sales for the season! Prices are still higher than usual due to the draughts last summer, but we're hoping they begin to drop soon.

Howdy, crawfish lovers!

The boys at Bayou Boils are thrilled to get back into selling and cooking NTX’s favorite Cajun delicacy!

As you might’ve already heard, the season catch is off to concerning start. Last year’s drought plus these extended freezes have led to a very unstable and low-yield catch, and consequentially sky high prices. The last two weeks’ crawfish trap inspections have continued to show little to no sign of crawfish, which is a concerning sign.

What does this mean? - more than likely a late start and prices that will be a few dollars higher than normal. Given the cold water temperature we may not reach a full harvest until late March or even early April.

We know you’re excited to cook and eat some bugs, and we’re excited to help make it happen. With such a low predicted catch we expect to be supplementing with shrimp and sausage for while.

We’re in very tight communication with our farms and will keep you posted with anything we hear!
