This dish is a blend on our Midwest roots, and then we melded those flavors with Spanish and Latin cusine.

Dry aged rib eye, ramp mole, blistered spring onion, guacamole stuffed morels. Pickled ramps, radish.

As we reflect on the past week's whirlwind, approaching our 6-year milestone fills us with gratitude for the journey we've traveled. Today was a special occasion, where we had the privilege of partnering with Colorado's finest wineries to showcase the exceptional wines our state produces. None of this would have been possible without the unwavering support and love from our incredible community.

A huge shoutout to for their invaluable assistance in crafting the equipment essential for today's event. Cirque had six consecutive events since Wednesday.

To our dedicated staff: your contribution over these six years has been indispensable. Whether it's walking the dogs, assembling equipment, or stepping up during understaffed events, your commitment to our shared vision is what truly embodies the spirit of community.

It's the people we surround ourselves with that shape a resilient community. We extend our heartfelt appreciation to , , , and all the small wineries that enrich Colorado's wine landscape.

A final course in our collaboration dinner.

Mackinaw Island was a great place to visit growing up. Especially in the fall with the changing leaves. It is the home of Macinac Islad fudge. This dish pays homage to Mackinaw Island and the fudge that comes from it, and the beautiful fall season.

Macinac Island fudge:

This amuse course is something that is near and dear to my heart. I grew up eating SOS or s**t on a shingle. A simple dish of wonder bread, Carl buddies chipped beef, and cream of mushroom soup. My grandpa was in the military, and he was served this on a daily basis. He, in return, made this dish for me whenever he watched me.

This version is my take on a classic. House made brioche, 72-hour short rib, brown butter mushroom bechlemal, pickled beach mushroom, and a celery leaf salad.
