Last but not least, our final stop on our gallery-inspired meal with and !
Inspired by Robert Henri’s “Ballet Girl in White”, this Pavlova (a dessert named after a ballerina!) is filled with chocolate hazelnut ganache and dressed with toasted hazelnuts, raspberry “slippers”, vanilla bean chantilly, and a sprig of licoricey sugared tarragon.

This course featured a crispy skin airline chicken breast over whipped potato purée, mustard sauce, and topped with pickled golden raisins and gold leaf.

Part 2 of our dinner collab with and !

Inspired by “Les Pommes (The Apples)”, we served this tartine (an open-faced sandich) made with sourdough toast from our resident bread master, apple conserva, salumi, and Manchego cheese.

Last week we had the honor of teaming up with and to develop a 4-course meal inspired by some of the pieces in the Art Center’s exquisite collection. After a gallery tour, guests were seated for dinner, with each course paired with a thoughtfully chosen wine.
Our first course drew inspiration from Lifeless Head of St. John the Baptist, 1887.
We started with a chicken liver and cherry pâté “truffle”, dipped in dark chocolate and served on a pumpernickel and olive oil “dirt”.
The truffle tasted like Christmas dinner and dessert in one bite, and the pumpernickel added a perfect crispy-salty goodness.
