This Sunday 2/16/25 from 5-9:30 is going to be a very special evening.

We are launching our new concept Wyldeflour - An Italian-American Pop Up at SKYKING PIZZA in Kingston Springs!

Reservations are STRONGLY suggested- please call or text 6152195874 with your name, party size and desired time to make a reservation! If you know that you are going to want a steak or oysters it would be very helpful to know when you make your reservation so I can have enough for everyone!

One of the largest struggles of owning a food truck is finding dining space for our customers during the winter. Sky king has been gracious enough to not only let us use their dining space, but also to use their wood burning oven to bring you all some seriously special offerings! Those of you who know my culinary background know I have been working wood burning ovens for a huge part of my career, and have learned to do a lot more with them than their conventional use for pizza.

So let’s show these incredible business owners some love and pack their spot full of happy people ready to enjoy some delicious locally sourced food and drinks! They will have their cocktail & beer bar open, so if you indulge in libations be sure to try one of their delicious signature cocktails! See you there! 😎🤘

Hautewheels is doing a chef takeover / pop up with our new Italian/American concept Wyldeflour on Sunday 2/16 from 5-9:30. The menu is below in the Wyldeflour post. The dining room will be open as well as the cocktail & beer bar. We STRONGLY suggest making a reservation at the hotline listed in the posts. We will have gluten free pasta available! Here We Go! The first pop up of many will be held at SKY KING Pizza In Kingston Springs TN
(385 N Main St, Kingston Springs, TN 37082)
On Sunday 2/16/25 from 5-9:30. Reservations are STRONGLY suggested. This is going to be somewhat of a soft opening. We are going to cap the first service at 100 reserved seats to ensure stellar service and low kitchen wait times. The dining room will be open and cozy for reservations , and the cocktail & beer bar will be running with open seating / limited kitchen menu.

The time has finally come to launch my second Brain Child, Wyldeflour: an Italian-American Concept.

There will be Hand Made Pasta. There will be Wood Fired Oysters. Things will get wild, in only the best of ways.

Daydreaming about Spring.. We can’t wait to get back out and serve you all this 2025! I’ve been booking as many events as possible for the year and the roster is lookin’ pretty sweet so far. From weddings to 4 day music concerts and everything in between, It’s going to be a great run!

In the meantime, both Our Traditional catering services and the bus are available to book for private events! Whether it be an office party/employee appreciation, Wedding / Rehearsal, Birthday, Church or School Event etc- You Name it, let us handle the cooking so you can focus on making memories!

After many, many long days and nights of editing I present to you our 2024 Recap Video! We had a year full of firsts and incredible opportunities. From feeding incredible world renowned musicians such as Victor Wooten and the Steve Miller Band, to doing massive productions such as Breakaway Music Festival and To the Future, and all the fun catering and hometown events in between. We’re ending 2024 with a BANG! Come see us at
“To The Future” 12/30 & 12/31 and enjoy Nashville’s Largest EDM Warehouse Party to date- Over 2K tickets sold already!

For the first time ever we will have a booth setup inside this event for easy access. The bus will be on-site but only as a kitchen for the booth space.

So if you’re into EDM and want to ring in the new year with lots of like minded people and great food, buy a ticket and come check it out! 😎🤘

Wow, Check out this awesome Italian spread! Last weekend we had the honor of catering for Morrison & Fuson Insurance in Dickson at Venue 912 , and they sure knew how to party! Between Zack Brooks being booked for the music and Us for the Catering, they had some of the best in the biz! Everything you see here was made from scratch and with love, and took about 48 hours to complete between the Focaccia, Panna Cotta, scratch made Cannolis & Pastas, Ricotta , etc.

Happy thanksgiving y’all! We had a blast serving at Grinder’s Switch Winery’s Winter Market last Saturday and Opryland yesterday, and now we’re headed back to Opryland tomorrow to serve thanksgiving day! We’ll be outside Delta-Portico from 5-9 with a few other of Nashville’s Finest Food Trucks.

This Saturday 11/30 you can find us at craftsbyhandmadenashville market at Red Caboose Park in Bellevue from 10-4!

We currently have another batch of our Braised Short Rib Stroganoff on special that’s been selling like crazy, as well as our scratch made hot cocoa with vanilla-nutmeg whipped cream.

We’re excited to be back at Grinder's Switch Winery’s main location (2119 Hwy 50 W Loop, Centerville, TN 37033) this Saturday 11/23 from 12-4 for their Second Annual Holiday Market!

We’re going to have all of your favorites as well as a special that will seriously stick to your bones and keep you warm - our Braised short Rib “Stroganoff”. We ran this awhile back and it was a huge hit!

Our vegetarian special this week will be seasonal squashes, Arugula and herb butter garnished with Pomegranate Seeds.

For Dessert this time around we have Mint Chocolate Chip Gelato Sandwiches from our friends over at Sweet T's Gelato & Galore, LLC!

We will also have a small batch of Scratch-Made Hot Chocolate available! (NOT FROM PACKETS) 😉 ☕️

There will be 12+ vendors with some really neat stuff including Tropical Plants, Hand Forged Knives, Clothing & Embroidery , and tons of festive holiday goodies! Santa will be on-site for photos and gift lists, and of course the winery will be open with all of their wonderful offerings of all things off the vine & more.

Come see us tomorrow 11/9 at the Harpeth Harvest Festival from 10-3 PM at Hidden Lake Park (7851 McCrory Lane Pegram)!

I am currently making a small batch of Lamb Bolognese for tomorrow! It will be served over Perfectly Al dente Rigatoni and garnished with fresh basil, House Made Ricotta, Pecorino Romano and a dash of Extra Virgin Olive Oil. My goal is to sell out of this dish before leaving tomorrow, so come get it while it lasts! The forecast looks like great pasta weather- but when is it not great weather for pasta? 😂

Tomorrow’s event is a ticketed event and family friendly, and is being held for a great cause- to support TN State Parks and the Harpeth Conservancy. So come on out and enjoy yourselves 😎🤘

Another week down, and another successful catering! This was for Vanderbilt’s Peabody College and it was a HIT! As winter approaches, our event schedule on the bus is quickly dwindling. We are looking for any and all holiday events and catering opportunities, so if you hear of anything send them our way please!

🎶 It’s the time, of the season, 🎶 it’s soup season, spooky season, and the ripest part of fall here in beautiful Middle TN. The leaves are changing and the air is crisp and cool. With these beautiful changes in scenery comes delicious weekly soup specials from your favorite Food Bus! To start it off, we have made a delicious batch of Scratch-Made Broccoli-Cheddar Soup. If you’ve ever worked in the food service industry then it’s no secret that most large chain restaurants use pre-made soups that come in frozen and ready to serve. I am completely against this practice. As with everything we cook at Hautewheels, Soup should be done right. I start by making a Caramelized Onion, Garlic, Cheddar & Smoked Gouda Mornay Sauce with fresh milk and cream and a roux of butter and flour, then break down whole broccoli crowns and blanch the florets and stems accordingly. I then combine the broccoli and mornay with matchstick carrots and the magic all comes together. Garnished with fresh green onions and a Cheddar-Monterey jack blend and served with roasted garlic toast, it’s already been quite the crowd pleaser. Our soups are available hot and ready to eat or also cold to take home in both 1/2 Quart and Full Quart sizes. Here’s where to find us this week to get some of this deliciousness:
