Usually by this time of year, we’ve tapped the maple trees to make syrup. We decided to wait a little longer because we still have a few too many quarts from 2020 in the cold cellar. I can’t wait for the kids to see the process again. Last year they drank gallons of maple sap (which is basically water when it comes out.)
Our old growth trees would crank out five gallons of sap a day when the weather was right, which is way, waaaay more than you should expect from a tree. It takes 40 gallons of sap to make 1 gallon of syrup. We tap three trees, boil on weekends and after the kids go to bed, and get about two gallons a week.
I love making syrup and I’m finding it hard to wait. It’s a sign that winter is almost over. Spring is right around the corner!
PS I’m not a maple syrup expert, but making a small batch of syrup is an easy, inexpensive, fun activity to do - with kids or without. Drop a comment if you want to try it this year and I’ll give you all my tips!
