Finally got a minute to post the beautiful pasta made with Grain Girls sprouted wheat flour. I made fettucine and capellini. Both performed very well throughout mixing, rolling, freezing and cooking. I did "rest" the dough overnight. The fettucine - with Sh*take Bison. The capellini - with pan seared wild Alaskan salmon with blood orange and Danish smoked sea salt. Hearty and flavorful.

Angel Food Cake for a private party: I wasn't satisfied with the end result - I thought the Iceland Chocolate and dipped strawberries were too garish for such a delicate cake. The party goers disagreed, and after "ooohs" and "ahhs" they ate that cake like a bunch of chocolate crazed Maenads. You are your own worst critic I guess...

I am a great lover of the Blue Cheese. Here in Minnesota, it's St. Pete's Select from Caves of Fairbault. I recently had the chance to travel to Humboldt County in northern California. I found this incredible blue: Shafts Blue from Roseville, California. It was deep and creamy and I made an excellent blue cheese dressing with full fat Greek Yogurt to dress a grilled steak salad. Later on, I was in Eureka Natural Foods in Mckinleyville, and bought some bulk blackberry honey. If you've never tried blue cheese and honey on a good cracker it is all umami.

Had a great time meeting the Humboldt Grain Girls! They're at the farmer's market at Arcata Plaza every Saturday morning. I met Lisa later in the week and she showed me their operation, and their sweet new Austrian Mill. The grain smells amazing! I bought some of the durum that she specifically recommended for pasta. Stay tuned for pics of that project: it smells so amazing - it's hard to describe: it smells RICH. Humboldt county has great "terroir" with it's misty ocean mornings and moderate climate. Thanks Humboldt Grain Girls
