As a Chef…
My goal, every second, is for the customer, to taste how I think.
Learning your own palette, makes you better at understanding tastes and textures. Color, preparation, design, timing, allergies, what goes with what, 8 things going on at one time. Delegating, head on a swivel, blinders off.. see everything. With the right team, it sounds like music in slow motion. I don’t hear anything but the sounds of food in my mind, heart, and fingers. Any order, it’s even more than that going on at once. I didn’t just find my niche… I created it.
