My signature dish is Swamp Tonic, a genuine Cajun style gumbo made with Andouille sausage and chicken, topped with sticky white rice, the best in New Mexico.
By popular demand The Beast has become a mainstay, a pulled pork sandwich made with my homemade S5 Sauce piled into a wheat, white, or sesame sub.
