I grew up in a family that had BBQ almost every weekend, but it wasn't until I was older that I learned to love and appreciate the art of smoking meats. On a whim, while helping a friend with a political campaign, some friends and I entered a cook

-off for advertising reasons, and by the end of the day (despite hitting nearly last place) we were hooked. Since then, friends and I have practiced regularly and little by little perfected our craft. We continue to compete on weekends we're free and we've hit some nice wins against some of the best this state has to offer. Now, BBQ is a love and passion of mine and I cook for my customers like I cook for the judges. You will only get meats injected, brined, and seasoned with the best products on the BBQ market. This continues to be a hobby and cooking for people helps me practice for the competitions, which is what I really love to do. I cook to order, mostly on weekends, but on occasion, I will deviate from that. Please feel free to contact me if you ever have questions and I look forward to cooking when I can. I typically only cook on weekends and holidays, which is when I have time away from my "day" job.

Great class on pan de campo and carne guisada at Pro Pit on Jackson and Sprague in Edinburg this morning. Next weekend he’s having a class on chicken, pork ribs, and brisket and the following two weeks on cabrito and open fire. Balde has years of experience as a winning competitive cook and I highly recommend all his classes. I’ve taken a few myself and have learned so so much! Get it on these classes!! Every learning opportunity taken is a way to perfect your craft!

Good evening! This weekend team Vera’s King-O-Meats competed at the Courage to Change Palmer Drug Abuse Program Cook-Off in Edinburg, Texas. It was a great weekend and had the privilege of hearing our song for the walk. In the end, we placed:

3rd Place Beans
4th Place Chicken
4th Place Pan de Campo
8th Place Brisket
27th Place Ribs

6th Place overall out of 47 teams who competed.

Thank you to Champion’s BBQ Alliance, Eddie Tapia and Judy Tapia, for running a smooth operation. A great big thank you to Nadia De La Garza-Ochoa and the staff, board members, and volunteers for being so organized and helpful. It was such a fun event and a beautiful environment to be in. Until next year!

We will be at Bert Ogden Arena on Friday night and Saturday, all day! Come out and support the Palmer Drug Abuse Program-McAllen!!

We will be hosting our biggest market ever THIS SATURDAY at the Bert Ogden Arena alongside the Palmer Drug Abuse Program! We will have over 140 vendors to shop from, food and drinks, a DJ, a BBQ cook off and so much more! This is a fundraising event that we are so proud and beyond grateful to be apart of. PDAP helps so many individuals and families in the RGV struggling with substance abuse so be sure to come out and support them as well as these amazing small businesses!

And a huge thank you to the Bert Ogden Arena and their wonderful team for allowing us to use their space for this event.

We can’t wait to see you there. Together We Thrive! ✨
