Not bad weekend. TEAM PDAC did very well. The winds and severe weather kept the so so teams away. Only the die hards stayed through the weather. 🥇 place bartenders choice, 🥇 place beans, 🥈 place brisket, 🥈 place ribs, 4th chicken, 5th chefs choice! 🥈 place overall. Had some fun and getting somewhat better at cook off barbecue.

Bucket list review. Hard 8 Barbecue. I am pretty confident this location is not the original so maybe Hard 8 Light. I’ll keep this short. Decent barbecue but nothing better than average. Sorry y’all, I was not impressed. Best item was the onion rings. Tells you all you need to know. I was pretty disappointed…

Good times trying a cool little hole in the wall place. “Get lost boy…we’re busy” setting at the bar of several famous movies. “I've fought in two World Wars and countless smaller ones on three continents. I led thousands of men into battle with everything from horses and swords to artillery and tanks. I've seen the headwaters of the Nile, and tribes of natives no white man had ever seen before. I've won and lost a dozen fortunes, KILLED MANY MEN and loved only one woman with a passion a FLEA like you could never begin to understand. That's who I am. NOW, GO HOME, BOY!”

cook off was a success! 🥇 place beans out of 23 entries. 7th place out of 44 entries, open category we made the top 14 (Green Chili) out of 45 entries. However our we entered did not make the final table. I think the local judges wouldn’t consider anything that wasn’t from Meyer’s or Southside Market. Shame that crowds couldn’t sample each teams entry and vote for the best. Some home cooking on the judges table for sure. Pork butt was a little overdone so we didn’t expect anything on it. All in all, it was a good time and we did a respectable job. This event will probably wrap up the cook offs for us this year. It was great fun. Thanks Gail, Wyatt, John Schroeder, and Jason “Zippy” Zwahr! The Gatorpit Barbecue Pits was rocking out the barbecue.

Big review!! I’ve heard rumors of this little joint near College Station Tx for some time. Well today the stars aligned as my meeting ended at 10:52am giving us the perfect window to get in and out. Let’s get into this review . Simply put, this place has squarely moved into my top five places of all time…. Brisket, pork ribs, sausage, and pulled pork all earned the all important “destination worthy” ranking. For those in the know, that means if you love barbecue, you should get on a plane ✈️ if needed to try this place. The “Blink and you’ll miss it” location adds to the experience. While I didn’t have any sides, they looked as good as the barbecue. Get there early or miss out. Really nice people, damn solid barbecue.

Weekend Recap: Walking up to the pits in the dark on Sunday morning, I began to worry. Would they recognize me, would they be pi**ed I was wearing “short pants”, would I remember the names of the volunteer fireman and community members after so many years away. As I walked closer and closer, I realized the day had already started off poorly for me. The fires were lit at 3am and the pits were in the process of being loaded with beef. My comment: “Let me know if there is anything I can do to help.” was met with a quick and sharp response… “If you’re waiting for an invitation or an ask fella… you’re gonna be waiting for a long time… If you see something that needs to be done, just jump on in there and do it!!!” After 25+ years of being away, my worries quickly became reality. Oh s**t! I was squarely placed on the outsider list. So I kept my head down, jumped in and helped, and started doing the things that needed to be done. You should have seen the confused looks on their faces when they saw I knew where things were located, what needed to be done, and began calling them by name. Things really took a turn when I sprinkled in some broken German and Cech… After an hour or so the question finally came from the group…. who the hell are you? With the mystery solved and the identification of the bearded man revealed the handshakes, hellos, and jokes began to flow. By the time we were cutting meat, I was back to being just another volunteer helping out with the timeless tradition of supporting the community in which we all grew up. Needless to say, this past weekend will stay around in my memory bank for quite some time. Seeing ole Henry Foerster at 95+? working the cast iron barbecue gravy pot was both invigorating and saddening. Unreal he’s still at it yet sad the younger generations haven’t allowed him to sit back and mentor his unwanted but soon to be needed replacement. Schmeckt Gut!! 2022 New Ulm Fireman’s Feast.
