Sumac is a weird one, it’s both nutty & citrusy. Great with dill, & a rich dark rusty color. It sure makes for a tasty filet!

One of the things I miss from my years in restaurants…

You’re basically done—or on your way to being done. Your brain knows it. Your body knows it . . . But pride persists.

What I do miss, I tell them, and will *always* miss, is that first pull on a cold beer after work. *That* is irreplaceable. Nothing approaches that. That’s the kind of satisfaction no bestseller can ever beat—no television show, no crowd, no nothing. That single moment after a long and very busy night, sitting down at the bar with your colleagues, wiping the sweat off your neck, taking a deep breath, with unspoken congratulations all around—and then that first sip of cold, cold beer. It tastes like victory. Happy waiters, flush with tips, are ringing out, the cooks look pleased with you and with each other, and you remind yourself that nothing came back the whole night.

Maybe it’s Curtis Mayfield, ‘Superfly,’ that comes on the sound system then—put on by a sympathetic bartender—or ‘Gin and Juice’ (also for the old folks), or something the moment somehow, by collective will, requires: ‘Gimme Shelter’ or The Stooges’ ‘Dirt.’ Songs from some other time—not this one—songs that will always mean something to somebody present, but maybe you had to be there.

You look at each other with the intense camaraderie of people who’ve suffered together and think, ‘We did well tonight. We will go home proud.’

There are nods and half-smiles. A sigh. Maybe even a groan of relief.

Once again. We survived. We did well.

Fresh Baked Goodness from …

Two types of sourdough, New York style bagels (errythang, cinnamon-sugar & plain) chocolate-coconut crispy treats, chocolate chip pistachio cookies. Frozen pizza dough for busy nights. My wife the beautiful & talented, “homestead hippie chick” needed a little gluten therapy. We’ve been focused on getting the garden & greenhouse all set up for spring planting. Weeding, raking, turning earth, remounding, the list goes on… we got caught up on everything & had Sunday to just chill out…Because my lady has a very hard time doing “nothing” she instead decided to do a “little” baking. Not to mention all the sandwich bread we go through with 4 kids in the house!
The end result:
Crusty & airy sourdough, plus some for the freezer.
The BEST frickin’ bagels ever. Dozens of super yummy treats for kids lunches & desserts. She is an absolute rockstar and takes impeccable care of our family far more than baking all our bread. Plus the house smells AWESOME!

I’d been working in kitchens for 6 years before I decided to go to culinary school & learn the science behind the foods I was cooking. My dad bought me a set of good chefs knives. I managed to lose only one of them in the last 30ish years (and add a couple, too) The handles were incredibly damaged & separating. The blades were nicked, dinged, in dire need of some TLC. I called my buddy (he’s a wizard of steel & bone & wood, you see!) & gave him some antlers that I got from one of thee most prolific hunters I know, .
Brett hand shaped & incorporated different types of wood & antler into new handles. Then sat down & trued ground, sharpened & polished each blade.

I AM SO STOKED for this homecoming!! These blades were unusable. gave them new life!
Brett I’m so grateful to have them in my hands!
