So we made a trip down to Sutherlin. I met a lot of nice people and we served a lot of bbq to some people. Some ask "Do you have a place in Eugune?" If you stopped by and liked the smoked meat and would like more, let us know. We cook about every 2 weeks for our local friends/community. It's wood fired. For competition, we would have to sacrifice our BBQ purity, and we chose not to this time. We wrapped in butcher paper instead of foil. We smoked whole briskets, rather than separating the flat and point. We chose not to inject and lather in sauce. We used real wood fired smoke rather than pellets and charcoal. We will adjust in the future to be competitive. Our food for the public was as good or better than our competition food. Thank you to all that stopped by.
