Been busy catering the last few days for the mill at Cascade Pacific Pulp. 4 crews on 4 different shifts, plus maintenance and management (just over 200). Did boxed dinners on site with Steak Diane over rustic mashed potatoes, grilled green beans with pearl onions and shrooms, spiced apples with cranberries and pecans, a dinner roll with butter, and a chocolate turtle bar for dessert.

Always happy to serve these guys...

Was able to cater a small, 16 person Christmas party for a client. We did a plated dinner, offering a choice of beef tenderloin topped with a port plum sauce or poached salmon in a mustard and lemon dill sauce. Both came with garlic & white cheddar whipped potatoes with parsnips, ginger roasted carrots, spiced apples with cranberries & pecans, and a holiday salad with jicama, feta, glazed pecans, fried scallions, and cranberry balsamic dressing. Dessert was mini carrot cakes topped with cream cheese frosting, shaved vanilla bean, and candied orange. Always fun doing the private, plated dinners. Gives us a chance to be creative and really go the extra mile.

Since all the plates were empty when clearing the tables... pretty sure they loved it. Thanks to Rebecca Wolthuis for having us cater their staff party

Been busy the past few weekends doing the tailgate thing at Autzen Stadium.

Last weekend it was the University of Minnesota for 300+ alumni. While we offered light snacks, nachos, and desserts... the main menu was smoked pork shoulder, grilled red pepper chicken, Mac salad, pineapple poppyseed slaw, cowboy caviar, 5-bean baked beans, and Fireball grilled pineapple. I can begin to tell you the number of compliments my staff and I received for the "best tailgate food and service in years" by many of the Golden Gopher alumni.

This past weekend we took on two more parties that covered 200+ guests. One was for Dutch Bros and we offered a full breakfast buffet with steak or chorizo breakfast tacos, French toast, a sausage-biscuit-egg-potato-cheese scramble, fruit salad, yogurts, and pastries. The other private party chose a combination of breakfast burritos, fruit salad, and pastries...as well as smoked pork shoulder, tortellini and cheese, and baked beans. Had so much fun and was so busy... forgot to get pictures!

Now...a few days off until the busy holiday party season!

Office lunchbox for my favorite group...smoked tri-tip on a grilled ciabatta bun with pepper jack & honey habanero BBQ sauce, white cheddar mac-n-cheese, and elote seasoned corn with jalapenos....and a chocolate caramel Hershey's bar to finish it off. One of our great neighbor's daughter's birthday was today. And what did she request for her special birthday dinner you ask? Smoked tri-tip! And not just any smoked tri-tip, but Jeff's (Casey J's Catering) smoked tri-tip!

Now that's how you celebrate a birthday...at any age!
