Casey J's Catering had a spectacular year in 2024 and we wanted to say thank you to all of our clients, vendors, colleagues, friends, and families for the support, help, and business we received this past year. Without you we wouldn't be where we are today.

This past year saw us put together and get on social media with Facebook and our website. We participated in the Love In Lane County wedding show. We also were able to purchase our new mobile unit, allowing for bigger events and the ability to service more areas. We did events in Newport, Aurora, Harrisburg, Corvallis, Lebanon, and other areas. We helped with several fundraisers, including the annual Pearl Buck Center and Oregon Waterfowl Association. Office lunches and parties were a big draw for us this year, as well as several large group get togethers like a North Eugene 30th Class Reunion and Four Square Churches Christmas party. We did a few baby showers as well as a 90th birthday party. Many incredible friends were made this year and I had an amazing time at many of our events. There are so many people to thank that I can't fit everyone in...but I did want to recognize a few people and businesses. Special thanks go out to:

Julie Dunbar with Simply Graze, Dawn Keeney with Oregon Bartenders, Nicole Kersey with Country Inn, Dave Flanagan with Pocket Zeus Media, Sarah Ferguson, and Toni Maldonado. All of these folks were instrumental in my success this year and just wanted to voice my gratitude.

And last, but not least, I wanted to say thank you to my wonderful wife Angela and daughter Casey Jane. Their support, help, patience, and love made moving forward with the business so much easier. Love you guys!

I hope everyone has a healthy, prosperous, and rewarding 2025 and that our paths may cross in the upcoming future.

HOLIDAY EATING TIPS

1. Avoid carrot sticks. Anyone who puts carrots on a holiday buffet table knows nothing of the Holiday spirit. In fact, if you see carrots, leave immediately. Go next door, where they're serving rum balls.

2. Drink as much eggnog as you can. And quickly, it's rare. You cannot find it any other time of year but now. So drink up! Who cares that it has 10,000 calories in every sip? It's not as if you're going to turn into an eggnog-alcoholic or something. It's a treat. Enjoy it. Have one for me. Have two. It's later than you think. It's Christmas!

3. If something comes with gravy, use it. That's the whole point of gravy. Gravy does not stand alone. Pour it on. Make a volcano out of your mashed potatoes. Fill it with gravy. Eat the volcano. Repeat.

4. As for mashed potatoes, always ask if they're made with skim milk or whole milk. If it's skim, pass. Why bother? It's like buying a sports car with an automatic transmission.

5. Do not have a snack before going to a party in an effort to control your eating. The whole point of going to a Holiday party is to eat other people's food for free. Lots of it. Hello?

6. Under no circumstances should you exercise between now and New Year's. You can do that in January when you have nothing else to do. This is the time for long naps, which you'll need after circling the buffet table while carrying a 10-pound plate of food and that vat of eggnog.

7. If you come across something really good at a buffet table, like frosted Christmas cookies in the shape and size of Santa position yourself near them and don't budge. Have as many as you can before becoming the center of attention. They're like a beautiful pair of shoes. If you leave them behind, you're never going to see them again.

8. Same for pies. Apple, Pumpkin, Mincemeat. Have a slice of each. Or if you don't like mincemeat, have two apples and one pumpkin. Always have three. When else do you get to have more than one dessert, Labor Day?

9. Did someone mention fruitcake? Granted, it's loaded with the mandatory celebratory calories but avoid it at all cost. I mean, have some standards

10. One final tip: If you don't feel terrible when you leave the party or get up from the table, you haven't been paying attention. Re-read tips; start over, but hurry, January is just around the corner. Remember this motto to live by:
"Life should NOT be a journey to the grave with the intention of arriving safely in an attractive and well preserved body, but rather to skid in sideways, chocolate and wine in one hand, body thoroughly used up, totally worn out and screaming " WOO HOO what a ride!"

It's been a busy week with more to come! Started last Saturday with a job at Four Square Church in Newport with a full Mexican buffet for 130 people. It included fixings for street tacos, nachos, salads, and enchiladas. We followed that up with serving a bit over 300 guys Tuesday and Thursday at Riverbend Building Materials in Salem and Eugene. They went with BBQ shredded beef sandwiches, smoked pork loin, and the usual sides of Mac salad, baked beans, slaw, and fruit salad. Thankful for their business and opportunity to feed them.

Had a great night catering at the fundraising
event for The Pearl Buck Center. The theme this year was "Casino Night" and offered a variety of table games, raffles, and paddle donations. Teaming up with Simply Graze, we offered options at five food stations: Caesar salads w/ blackened salmon...sliders w/ choice of smoked tri-tip, braided pork loin, or roasted ham...pork carnitas street taco's w/ mango salsa...homestyle mac-n-cheese w/ choice of toppings like bacon, shredded smoked pork, broccoli, and bread crumble...and Julie's custom made charcutierie boards. Sweets were provided by Mad Batters and cocktails by Oregon Bartenders.

All and all, a fun night for a great cause!!!

Serving prime rib w/ au jus & creamed horseradish, white cheddar & garlic smashed potatoes, grilled veggies, fresh salad w/ fresh basil ranch & balsamic dressing, and rustic dinner rolls.

Another busy week with an office lunch, 70th birthday party, and finished off with a beautiful wedding at Mt.Pisgah. For this wedding we offered and served a different type of meal than the usual... teriyaki chicken, marinated pulled pork, grilled tempeh, coconut & pineapple jasmine rice, poppyseed pineapple slaw, yakisoba noodles w/ grilled veggies, green salad w/ mandarins & sesame ginger dressing, fruit salad, and hawaiian dinner rolls.

I do believe it was very well received...😉
