Catered another beautiful event this past weekend. The ever popular summer bbq...smoked pork shoulder, pepper grilled chicken, dill potato salad, 5-bean baked beans, fruit salad, pineapple poppyseed coleslaw, pea salad w/ jicama and bacon, jalapeno cornbread, and lemonade w/ strawberry puree. Endless compliments made the work in the high heat all worthwhile.

Side note...I was catering this wedding at the exact same venue I was married at on exactly the same day 23 years ago.

With my wonderful wife's blessing of course!

Our take on a fun "taco-bar" for a relaxed, fun reception...

It included shredded pork & beef with corn & flour tortillas, seasoned black beans, refried pinto beans, shredded cheese, lettuce, olives, guacamole, jalapenos, cojita, tortilla chips & nacho cheese, romaine salad with cilantro cojita & chipotle ranch dressing's, sour cream, cilantro lime crema, and homemade salsa's (including fresh pico, mango salsa, and medium spiced salsa).

Fresh strawberry lemonade topped it off...as well as cold Modelo.

Yesterdays meal for a 50 person bridal shower... smoked tri-tip, grilled chicken thigh, lemon orzo pasta (w/ feta & pine nuts, spinach, and kalamata olives), field greens w/ fresh basil ranch dressing, and lemonade.

And of course Casey J's homemade Honey Habanero BBQ sauce!!!

So after the last post, I received more than a few comments asking what exactly I offer for staff/crew/office lunches? Well, the truth is, I pretty much leave it up to you. I can do boxed meals (hot or cold), buffet style, or even plated service if you like. I do all types and styles of food including BBQ, Asian, Thai, Greek, and Mexican...all they way down to P&J sandwiches! The cost varies on number of people and type of food...usually in the $10-$15 price range. I have posted a few meals and brief description for ideas...but please, always feel free to contact us and let us know how we can help you create a cost effective and different type of meal than the norm.

A little office lunch for a monthly staff meeting today. Going for a Mediterranean flare today to shake things up...marinated and seasoned grilled butter chicken, orzo pasta salad, fresh field greens, naan bread, and pepper hummus.

Heard it was a hit...

Thanks to everyone for coming out and showing support at the "Love in Lane County Wedding Show" this past weekend. Met lots of great people, vendors, and potential clients. Networking with other professionals in connecting fields was great. It was fun sharing a space with my sisters company, Simply Graze, talking up our products and services we offer (hence the throat lozenges), and sampling products to people. Lots of great comments and feedback...

Well, I finally joined the crowd in promoting and advertising my growing business...Casey J's Catering! Up until this point, I have been a "word of mouth" type of guy, always relying on my product and service to speak for themselves. But as I have been growing and looking to the future, it was clear that reaching more people and potential clients needed to be a priority.
