Dry brining (seasoning with salt and resting to let the salt permeate into the meat over a specified period) is an amazing way to get salt to pe*****te further into larger cuts. I let this 3lb ribeye dry brine in the fridge, uncovered for 12 hrs. Once it’s time to cook, it was additionally seasoned with pepper and garlic powder.

Smoked old fashioned:3/4 tsp sugar1/8 orange slice1/2tsp cherry syrup 3 dashes of bittersMuddle in shaker Add 2 oz favor...

Smoked old fashioned:

3/4 tsp sugar
1/8 orange slice
1/2tsp cherry syrup
3 dashes of bitters

Muddle in shaker

Add 2 oz favorite bourbon (I used buffalo trace)
Pour into glass with 1 sour black cherry and garnish with orange rind squeezed around the rim.

Smoked under glass using Breville smoke gun.

Hope you all get a chance to enjoy this wonderful cocktail at some point it’s one of my absolute favorites! Cheers! 🍻

What an amazing experience last week was! I got to meet and receive a guided tour from one of, if not the best meat purveyor ever! To be able to talk with him was absolutely amazing! The amount of care and attention to detail he brings to the culinary scene is unreal.
It was an absolute pleasure meeting Bryan from and I highly recommend giving them a try for your next big occasion!
