Fresh ginger pineapple lemonade
Ingredients:
For Ginger Syrup:
1 1/2 cups water
1 cup sugar
1 cup fresh ginger, thinly sliced (unpeeled)
For Punch:
3 cups unsweetened pineapple juice, chilled
2 cups lemon-flavored sparkling water, chilled
1/4 cup fresh lemon juice (from about 2 large lemons)
1/4 cup fresh lime juice (from about 3-4 medium-sized limes)
Instructions:
Prepare the Ginger Syrup:
In a heavy saucepan, combine sugar, water, and sliced ginger. Bring the mixture to a boil, stirring until the sugar is fully dissolved.
Reduce the heat and let the mixture simmer for 10 minutes, stirring occasionally.
Remove the pan from heat and allow the ginger syrup to steep for an additional 10 minutes.
Strain the syrup into a container, discarding the ginger slices.
Refrigerate the syrup until chilled.
Make the Punch:
In a large pitcher or bowl, combine the pineapple juice, lemon juice, and lime juice.
Stir in the chilled ginger syrup.
Add the lemon-flavored sparkling water and gently stir to combine.
Serve the punch over ice.
Notes:
You can omit the sparkling water for a stronger ginger flavor.
This refreshing punch is a perfect balance of sweet, tart, and spicy, ideal for any occasion!

Caribbean Fish Soup
Ingredients
2 pounds whole fish, scaled and cleaned
Juice of 1 lemon
8 cups water
4 green bananas, chopped
1 pound pumpkin, cubed
2 potatoes, chopped
2 ears corn, cut into 1-inch pieces
4 ounces carrots, cut into 1/2-inch pieces
1/2 cup okra, chopped
4 scallions, chopped
1 hot chile pepper
2 cloves garlic, chopped
1 teaspoon salt
1 teaspoon black pepper
4 sprigs fresh thyme
Instructions
Rinse the fish with lemon juice and drain. Bring water to a boil in a large pot, add fish, and simmer until soft, about 30 minutes. Remove fish and cool, keeping large pieces intact.
Boil the broth again and add green bananas, pumpkin, potatoes, corn, carrots, okra, scallions, chile pepper, garlic, salt, black pepper, and thyme. Simmer for 10 minutes, then add the fish. Cook for an additional 5 minutes.
Let the soup stand for 30 minutes before serving. Remove the chile pepper before serving.
Tip: Slit the chile pepper for extra heat, and reheat leftovers gently to avoid breaking down the fish.
