These chile verde huevos rancheros are all you need for breakfast! They started with the chile verde recipe shared in my previous reel, fried corn tortillas, some refried beans, fried over medium eggs, some queso fresco, and cilantro. The best part is when the creamy yolk mixes with all of the other ingredients! Who's down for a couple of these?

For this year's Superbowl, we will be offering brisket, pulled pork, St. Louis style spareribs, our cowboy beans, and green chile mac n cheese. The brisket and pork are perfect for sliders, sandwiches, nachos, tacos, etc. I will be taking orders until Feb. 5th, or until I am at full capacity! This happens often, so place your orders as soon as possible. Pick up will be between 11am & 1:30pm on Sunday, Feb. 9th!

As I reflect on the last few weeks and what is in store for the next few weeks, I am feeling very humbled and blessed! When this journey all started, I never dreamed that so many people would want to enjoy my food with their families. I just want to say thank you to all who continue to believe in me, my family, those who support my dream in any way, and those who continue to inspire me to keep going! There are ups and downs with anything in this life, but learning how to navigate the downs is the key! Create your own motivation, stay consistent, and God will guide you to your full potential!🙏

Leftover pulled pork always makes for some killer smoked carnitas style tacos! The pulled pork was fried in manteca (lard) to crisp up the edges before being placed in tortillas and topped with red/green salsa onions, cilantro, and queso fresco! Who needs a plate?

Man, I love me some smoked oxtails! These oxtails were seasoned with blazed beef and cooked on the Jr. using Max briquettes and oak chunks. Once the bark was nice, I wrapped them with beef stock, onions, garlic, rosemary, and more of the rub. They braised in the liquid until they were super tender!

Frying up leftover pulled pork for tacos never gets old! The smokey, juicy, crispy pork is just perfect topped with red sauce, guacamole, crema, panela, onion, jalapeño, cilantro, and a sq**rt of lime! I ate 5 without blinking!🤣
