Did you know you can make enchiladas without baking and rolling, dipping making sauce! Why make a big mess?

All you need is a rotisserie chicken from Walmart.

Simply have:

A jar of Conseca cream
A bag of shredded lettuce or fresh spinach
Corn or flour tortillas
Your choice of salsa or pico de gallo
Cheese of choice

Shred the chicken roll your enchiladas
Stuff tortillas with cheese and chicken
Pour queso and microwave for a minute and 50 seconds

If you use corn tortillad you can fry them before rolling

You’re gonna love these quik enchiladas. Top with lettuce, more cheese or pico!

Crunch and queso!

Goes well with rice and beans or by themselves !

Apple Bread Pudding Muffins

Take 1 loaf of bread and shred into a large mixing bowl.

In another bowl mix real good the wet ingredients -

Add 3 whole eggs

2 cups of milk (any kind will do)
In a pinch you can use water or cinnamon tea.
4 Tablespoons of butter or margarine
1 teaspoon of ground cinnamon
1 can of apple sauce (8oz)
1 cup of sugar
1 tablespoon of vanilla extract

Now add to the bread.

With a large spoon stir and flip all this goodness together.
Preheat oven to 365 degrees.

Grease a big muffin pan. Everything is big in Texas!
Scoop in your mixture. Bake on middle rack for 45 minutes. Let cool in the oven. Then rest on a cutting board before scooping out.
These will store beautifully for a week in the refrigerator or you can freeze in a ziplock for 1 month. Just reheat in the microwave for 50 seconds or let thaw overnight.

For more heirloom flavor a splash of anise water can be added to the mix.
Garnishe with icing, apple bits when baking or a caramel cube at the last 10 minutes of baking!

Chicken and nopales over white rice. Yum.

Recipe:

1 jar of nopales
5 boneless chicken thighs
1 tblsp. Garlic powder
1 tblps cumin
1 tblps salt
2 cups of water
1 tsp. Lemon pepper
1/4 cup olive oil

Drain noplales, rinse. Cut thighs into skinny strips. Fry the chicken until mostly cooked, in olive oil. All the spices and stir. Add the nopales. Stir and add the 2 cups of water. Cover and cook on medium low with the lid on your pot. Bring to a boil and let rest after you turn the pot off.

Prepare some plain white rice. Scoop your chicken and nopales over your rice. Add your favorite salsa if you like it hot! Feeds 6.
