MY PERFECT OMELETTE
Breakfast, lunch, and dinner
Fill it with whatever you like!
2-3 eggs, whipped until fluffy
2 T. cream or milk
Salt and pepper
Favorite cheese
Baby greens, arugula, favorite lettuces
Heat an 8-inch skillet, preferably nonstick, over medium heat, and then coat the bottom with butter or olive oil. Then, pour in the egg mixture. Reduce the heat to medium-low. Cook without stirring until the edges of the eggs begin to set, about 15 seconds. Using a spatula, pull the cooked egg into the center of the pan. Let the uncooked egg flow to the edges of the pan. Please tilt the pan as needed to direct the runny eggs to the edges. Fluffing the center until the eggs are mostly set. Then, add your desired fillings to one side of the eggs. Tilt the pan, folding the omelet onto the plate. Enjoy!

3 beaten eggs, whisk to fluffy
2 T. cream, milk, halfnhalf,
Salt and pepper
1/2 c. asparagus tips
3 T. minced ed onion
1 T. unsalted butter
1 t. olive oil
Pecorino Romano or your favorite cheese
Heat the butter and oil in a nonstick pan over medium heat. Add the onions and asparagus. Saute for 2 minutes. Pour in the beaten eggs and cream. Move the mixture gently into the pan. Cook until the desired doneness. Enjoy!
