First batch of granola in 2025. A parting gift for my house guest who is heading back to the UK tomorrow. I know my mom will text me when she sees this post to remind me she wants some as soon as she lands in a month ;-)
Granola is an easy, low effort, make at home snack that taste great as a topper for salads, yogurt or smoothie bowls. Combine oats, chopped nuts, seeds with spices a little healthy fat and something for a touch of sweetness and bake in the oven @350 for 15 min. If you want to add dried fruit it’s safest to do after it comes out of the oven. Let cool down completely before scooping in to an airtight container.
This batch was sweetened with a touch of coconut sugar, fragrant with turmeric, orange zest, and cinnamon and I added some toasted coconut and cranberries after it came out of the oven.

After 5 hours of sleep I got up a bit earlier than planned and watched the sunrise, made a real breakfast chilled with Lily and had time to make sure we ring in the new year with a semi tidy house. Even had time to make a few flower arrangements with the roses I bought myself late last night. Now off to Jupiter Island I go where I’ll help in a kitchen Iv spent more new years cooking than I can count since 2003… Last two years I was lucky to spend with my sister and her boys but cooking for is the second best way to spend new years in my book. Happy Christmas Eve- Eve. Met the current house guest out for happy hour and had the pleasure of introducing them to THE BLACKBIRD. One of the best espresso martinis there are. Having one and watching the sunset and realizing it was after 6 and spring is on the way made it even better. Two long but joyful work days ahead of me the a couple days off where I’ll celebrate Christmas with the pup that’s still around and hopefully a few friends who are still in a holiday mood. She was my best friend for 5333 days. Now she will be my guardian angel until we meet again. There is no pain on the other side of the rainbow bridge. Rest in peace sweet Emma. She was loved by many and loved every being she met. She saved birds, kittens, lizards and broken people. She is the best soul that I have met and I’ll be forever grateful that she was mine.

Sunday brunch at home was glorious and very last minute. My favorite kind. 30 min panic tidying up while potatoes where roasting then a quick cheese fondue using up all the bits and pieces in the fridge. Add a variety of cold cuts some greens and spicy Bloody Mary and you got the stuff lazy day dreams are made of.

This is the most interesting drink Iv had in a while. I HIGHLY recommend you visit in Oakland park. I tried the green Diablo . Who knew carrot, celery and ginger combined taste like cognac. Magic! My other drink the Gold Coast boogie was beautifully complex.

Guess who is back!! Tequila sunrise is now conveniently located halfway between Miami Airport and home and we are a bit less crazy for keeping the margarita a must right after airport pick up. Vs driving from Miami to Fort Lauderdale and then back to miami like we did at least 9 out of 11 times when I lived in coconut grove.

Time flies when you are having fun…12 years ago since I had the honor of calling myself executive chef at the 2012 Presidential debate hosted by Lynn university in Boca Raton. Although don’t know if I would have described it as fun while it was happening. Stressful, little nerve wracking and with a year of preparation and zero sleep for 2 weeks also tiring. But an experience not afforded many and well worth it afterwards.

Happy 4th! Second year in a row I’m off from work. Last year I was newly unemployed and this year I’m lucky to have 3 week vacation. and I vowed last year after an amazing kayak excursion with that we where spoiled for life of best Independence Day experiences so here I am unfortunately without her. #

Good job on the new menu @dunkin ! Loving the green goddess wrap. Scrambled egg whites , farro, sun dried tomato, spinach feta and green goddess dressing in a green lavash wrap. Remember to laugh, with others and at yourself . It makes the long days go faster and work feels lighter. Learning new things will also make your days more exciting. I’m not sure if I ever used a pasta maker but when I wanted to surprise the older Italian French couple I’m cooking for on the side with REAL lasagna I had to give it a try. It’s easier than riding a bike. And fun! The lasagna was delicious but I don’t think I’ll be spending the time to make it from scratch again soon. The difference in texture and taste wasn’t big enough to warrant it. I already make bolognese sauce and bechamel like the original version so lasagna with store bought noodles is something I make because it’s easy and delicious. I’m grateful for the learning experience and for a Monday dinner with my awesome neighbour. @anacarito22. Samosa waffles with lamb and chickpea stew topped with pineapple chutney. Breakfast on a lazy Tuesday. Trying to empty the fridge and freezer (in to my belly) and threw this together for breakfast trying to use up a soon to be spoiled pineapple and half of a baked potato from last night. 10/10 would make again. It was quick thanks to a small container of lamb and chickpea stew I made when mom was here.
