What else do you do on an early Easter Sunday morning other than smoke brisket? The answer is pop a ham in at 6am and make it double smoked. It’s gonna be a very long night/morning but it’ll be worth the effort!

We tried something a little different today with our chicken.

Usually we make a mock brooks chicken with quarters instead of halves but today we whipped up a new dry rub and introduced it to thighs and a little bit of smoke.

Here’s what came of our little experiment and we’ll tell you they are awesome. The skin has a crispy texture and the meat is super tender and juicy. The only thing now is we need a few customers to try them out and see which is better. Honestly we prefer this style over the mock quarters but you need to be our judge!

Just started 2 Texas style briskets at 430am for a private party in Broadalbin today for Broadalbin Kenyetto Fire Dept. Chicken will be cooked on site along with our maple infused baked beans, Mac salad, and Mac & cheese. Also on the menu even though we don’t offer any of these items are hamburgers, hotdogs, sausage peppers and onions, steamed and raw little neck clams, and our homemade fireman’s fair clam chowder.

We always get asked for start to finish on all of our meats that we prepare so here are the briskets. Other pictures will follow when we get set up at the location.
