A couple of weeks ago a memory popped up of an egg custard pie and I posted it. I have had so many comments about it and it just keeps popping up! Well I couldn't stand it any longer so I had to baked one yesterday. It's so quick and easy. 3 cage free eggs plus 2 yolks, use a whisk not an electric mixer. You don't want bubbles in your custard. Add 1 1/2 cups sugar. Whisk until blended well. I use about 1/2 t of vanilla paste but you can use what you have
Just be sure it is real vanilla extract. Also just a sprinkle of fresh ground sea salt.
Then add 3 cups of heavy cream. You can use 1/2&1/2 or whole milk but it definitely won't be the same rich creamy pie. Carefully whisk all ingredients together. Add about 1/8 t of fresh ground nutmeg. Stir in. Have a large pie plate lined with your prepared pie crust. Using a mesh strainer, pour your custard into the crust. You can fill it pretty full. Sprinkle with more fresh ground nutmeg nicely. Bake at 400* for 10 minutes then turn the oven down to 350*. Bake another 35-40 minutes. You will know it's done when it puffs up and has a firm wiggle. Wait at least 1 hour before cutting. It's even better if you can wait longer. Refrigerate. You might need to make 2. My mom is having a pretty nice slice for breakfast this morning! Good morning 🌞 I've been doing a lot of yard work lately. Also getting ready for VBS. We've had a great group of kids and of course that means lots of homemade cookies! Well I didn't make a one! A wonderful lady at our church whose name is also Donna, made 500 cookies of all kinds for these precious kids. It is her ministry. I got the pleasure of giving them out at snack time! I haven't been in the kitchen in a bit but tonight I'm making spaghetti and meatballs. Also some homemade garlic French bread and a salad. I think I'll use some of my banana peppers from the garden. I've been cooking a little lately. Something has unlocked my creative juices!
I went to the grocery store the other day looking for some things that really appealed to me. First in the door was local farmed yellow squash, small and shiny, some small deep green zucchini and fresh plump corn on the cob. I rounded the corner to the fresh fish. I found some first of the season sockeye salmon. I also bought some chicken and extra wide noodles.
Soooooo, tonight I made some brown and wild rice. I steamed some broccoli florets. I put a little sesame oil and butter in my pan, sauteed my broccoli, added my rice and let it sizzle. I shucked my corn, wrapped it in damp paper towels and microwaved it for 6 minutes. Put together a little sauce of fresh grated ginger, soy and sweet chili sauce to pour over the rice and broccoli. Salted the corn with pink Himalayan salt and of course good butter. Sauteed the salmon in sesame oil and butter. Salt pepper and lots of fresh lemon juice. Cooked to mid rare and it was all ready to plate!
It tasted so good. Corn goes really good with fish especially salmon. I'm now sitting in my chair so full!

Well I am really enjoying making pies. My Grandma Donna Lee made the most wonderful pies. I don't remember not being in the kitchen with her showing me how to cook. It always reminds me of her.
Our Youth group is having a yard sale, bake sale and carwash at HHBC on Saturday. So it just seemed right to make em some pies. I made Caramel Apple, Cinnamon Apple, Mixed Berry, Strawberry and one that is a 4 way pie of them all! Used leftover pie dough to make decorations just like grandma. I even threw together a Chicken Alfredo to go in the oven when the pies got done
It was so good. Well I am in bed early. It was a good day!

Made a cherry pie for Senior luncheon at church last night
I forgot to take a picture. I'm going to bake 4 for the Youth yard sale and Bake sale on the 14th. I will post some pictures then. I think I will make a caramel apple, mixed berry and 2 more. What do you think I ought to bake for the other 2? Have fun baking something. Living Life Deliciously again!

Well I've started a thing! I have been making pies. A few months ago my sister-in-law asked me to make a couple of pies for a bake sale for a little girl who had just been diagnosed with leukemia. Of course I said yes! Well my mom was watching and she kept saying how she wanted one since they looked so good. So here about 8:30 I go back to the store and get ingredients for 2 more pies! I came home and made one for my mom and another one for the fundraiser. And I actually enjoyed it. Soooooo since then I've been finding excuses to make pie! Who'd of thought? Go ahead, make a pie.
