Owning a business is hard, especially when everyone “wants a deal” or needs a “budget friendly” service. Any business owner knows what I mean. Someone once told me years ago that “I get what I pay for.” I have never understood that more than I do today.
If you are planning an event, especially if it’s for a big day like a wedding, quinceanera or other large event such as this, then the time and energy that you are putting into this is highly valuable, right? Same with the vendors that you hire. Mexican Express Fresh Catering Co puts so much time and energy in planning this part for you so that your special day is of the utmost perfection. The quote is just a smidgen of what you all get. There is also the counting of the supplies that’s needed for your menu, shopping for these supplies and garnishes. Prepping the garnishes, packing and prepping the cups, straws, napkins, plates and putting together your menu and custom alcohol shopping list if you have one, staying in contact with you at all time before the event, setup, travel, breakdown, cleanup, holding the necessary liability insurances to make sure everyone is covered on the day of event.
So when I hear the words “budget friendly”, “discount” or “can you give me a deal” It’s like a kick in the stomach knowing how much work is actually put into this. Our business runs promos as we can, when we can, but that’s just what it is a promo, if you are looking for “budget friendly” I’d take up on these offers as soon as they’re available.
With that being said, Mexican Express Fresh Catering Co knows how IMPORTANT your event is to you and we will always provide the highest quality customer service and conduct. We try our best (traffic permitting) to be on time, communicative, reliable and be professional at all times. We can secure a contract to make sure both parties follow through with their responsibilities for the event. If you are interested in booking but you aren’t able to put a deposit right away, no worries, we can hold the booking upon the signing of a contract for a week! We understand it’s hard, especially if you have no sponsors or if you’re doing it alone. WE CAN WORK WITH YOU. Just reach out. Taco cupcakes appetizers! A hit to any party! In a cupcake pan. Spray with olive oil, add a sheet of wonton wrap then top with a spoon of precooked taco meat (use your own favorite recipe) then add cheddar cheese and repeat the process, just 2 times, them bake in a preheated oven at 375’ for about 17 minutes then take out and let rest for about 5 minutes then add pico de gallo or tomatoes. Sour cream, salsa, chives, jalapeños just go with your passion! Provecho!

We dust them with flour and we take 2 egg whites and beat that to a fluffy peak and then we coat each poblano with the egg white and fry to a golden brown! Alfred Martinez, a Dallas legend passed away. He was steward of the El Fenix brand for decades, in particular, he held post at the downtown location. Known and loved by so so many. He was a nice man, RIP, he had just turned 100 years old on June 3rd 2024 Alfred Martinez was the last living son of original El Fenix owners Miguel and Faustina Martinez.
