A few years ago we started to notice a trend around the country. Farm families were starting to put rooms up. On the barn,at the end of the driveway, in the front yard,etc. They were trying to get food to their local community. As our room has gotten busier we have wondered how we as a farming community will make this all work.As the demand around the country changes how do we as farmers supply the local demand? This local infrastructure has to be geared for small local suppliers and consumers. This will take time to rebuild and figure out how it all works. I know we are a year into this and we are still learning how to make it all work. How much milk will we need today? What do we do with what we don't sell? Will we be able to sell the meat from the calf born last week when he is ready 18 months from now? How many hens will we need today because egg demand is thru the roof? Just because the government decided they should eliminate so many chickens in the country. I hope as we all go forward we can figure this all out. It is going to be a journey for you and us together. Be patient with us as some days it strains our minds a bit knowing how to move ahead. As farmers we are a creative bunch so lets see what happens. Some days it is hard looking back at what our grandparents did and then try to adapt it to what we need today! Lets go down this road together and see what we find. We will do our best to fuel your families future with farm fresh milk, meat and more. Gary

Winter weather can cause winter blues . . .

We all experience our own flavor of this!

One of our best remedies is popping open . . . Our homegrown pickles — Summer in a jar! 🥒

Crunchy Lime Cukes - our generational recipe from the Loos side of the family is made with homegrown cucumbers from Tom and Kathy Neisen’s garden.

After deciphering Mommy Alt’s handwriting, Bob and Niki were able to perfect the pickle making process this summer with the help of Tom and Kathy with their amazing cucumber crop!

so crunchy . . . so green . . . so sweet . . . so tart. . .

Lime pickles to the rescue— especially with a roast beef sandwich! 1 Pint Jar is $12, and there is a limited quantity available on our digital store until Bob and Tom can get back in the garden!

We can feel the prep happening today and tomorrow. Being a “hostess with the mostest” is NOT for the faint of heart.

In-home entertaining might seem as if it’s going by the wayside, but we are here to tell you— it’s not! Some of the greatest parties we attend are in-home (or in-shop haha . . . aka “party shed”)!

➡️. Here are our “pro” entertaining tips . . .
*of course by “pro” we mean people who like to eat good food, have a great time, and always make guests feel welcome, safe, and whole*

🔹 complete necessary tasks BEFORE your guests arrive! We understand this isn’t always ideal, but it helps when there’s a menu planned, food prepped, and then the focus can be on your guests during their visit! If it works out— give your guests something to do as they arrive to keep your overwhelm at bay!

🔹 don’t get in your head about the way your house looks or the cleanliness of it. Of course we’ll clean the bathrooms and tidy up the kitchen, but there’s no need to add stress such as worrying about the baseboards needing wiped down! Luckily, we have wonderful family and friends who won’t judge us because we didn’t wash the windows before they came over— and if they do? It’s not our business 😉!

🔹 keep the conversation going! If it seems like some are sitting on their phone or zoning out, it may be worth initiating some interesting conversation to warm up the crowd! Food is a great topic since we have so many wonderful core memories of enjoying food with family this time of year. Something like, “Have you tried the orange jello salad Aunt Sam made?” or even, “Wow, Mom, this is the best ham you’ve ever made!” can open the floor for some good and chats.

‼️ PARCHMENT PAPER ‼️

This stuff is the sh*t for all things baking!

If you don’t have this, run and grab some NOW!! . . . parchment paper . . . not wax paper! 2 totally different things!

What to expect when using parchment paper:

🔹nonstick! for real . . . those cookies just slide right off!!

🔹 minimal mess . . . parchment paper collects the mess and because it is nonstick, those sticky messes and burnt edges just aren’t a thing when it comes to wondering, “how in the heck am I going to clean this pan”

🔹 near-perfect baking . . . since parchment paper prevents browning, whatever you bake on it will turn out more uniform and brown evenly!

‘Twas the night before Thanksgiving,
And all through the kitchen . . .
Family members are stirring,
Many willing to pitch in . . .
The noodles were made with loving care,
Knowing our loved ones would soon be there . . .

The pie crusts are rolled and baked is the bread,
The vision of pumpkin pie with extra whipped cream lives in my head . . .
Lucky for us, Bob’s got the day off from Knap,
We know we’ll celebrate with a little nightcap. . .

So much turkey, all piled on a platter,
If you don’t eat enough, mom will ask, “what’s the matter?” . . .
We may head out to a Thanksgiving bash,
First things first— there’s potatoes to mash . . .

Fill the pies, punch down the dough,
Here come the guests, we’re ready for the show . . .
We are so glad you’re here for another great year,
Before you sit down, could you grab me a beer?

The turkey is out — wow, what a big chick!
Eat now, friends— it’ll get cold quick!
Now bellies are full— you’re feeling a little shame,
No worries— unbutton your pants, and turn on the game!

All have eaten, the leftovers are dished,
Those select few adults are getting kinda blitzed.
What a great way to spend this day in fall!
With the family— sure love seeing them all . . .
