What an absolutely amazing group I was able to cater too this last week. Caprese Skewers, chorizo and Bacon wrapped dates, seared lamb Chops, creamy polenta with browned sage butter, Sauteed fresh Spinach topped with Goat cheese and Balsalmicreduction. Finished off with Flourless Chocolate Ganache Cake, Creme Anglaise and Raspberry Puree.

Trying a new Chocolate Mousse Pie recipe. I think I like the exaggerated pie Crust. What do you guys think? What I mean by exaggerated is I filled pie less and left some room at the top, revealing more of the crust. It's the little things that matter.

I loved this menu I provided for 6 wonderful ladies visiting Fredericksburg, this week. Caprese Skewers, Rumaki, bacon wrapped apricots and jalapeno for Appetizers. Filled by salad dressed with cherry tomato, feta, candies pecans & balsalmic vinaigrette. Baked chicken breast with creamy white wine sauce and sprinkled with currants and roasted pinenuts, sauted squash, rolls and homemade tres leches for dessert

I received a request for a Strawberry Hawaiian Pie. ( something I've never made before) Pineapple cheesecake topped with Strawberries, toasted coconut flakes and pecans and of course wagyu beef burgers, patty melts, steak fries and fresh flowers.
