I used three different cheese in this recipe. Boars head Monterey Jack, Publix Colby Jack, and Boars head Sharp Cheddar. This beshamel sauce started with 4oz of flour and 4oz of salted butter. I warmed the milk in a sauce pan with a half of an onion and fresh thyme sprigs. I added organic dried mustard and white to milk before mixing in roux.
