I've cooked more this past week than I have in months for myself. I had a medical procedure and wanted to make sure I was doing all I could to ensure a speedy recovery, so I loaded up on fresh fruits and veggies along with proteins. Tonight I whipped up a quick dinner with sauteed trout and a deliciously addictive English cucumber salad with grape tomatoes, red onion, feta cheese and a herby lemon vinaigrette. I could eat this salad every day, it's so refreshing!! I've been in a lemon mood, lemon garlic green beans and lemon broccoli 2 nights in a row. Take steamed or sauteed broccoli and add a little olive oil, Italian seasoning, lemon zest and juice, omg it will liven that broccoli right on up, chef's 😙 I've made chicken Cesar salad, salmon with green beans, peach arugula chicken salad with a fantastic peach lemon vinaigrette, chicken breast with a mushroom cream sauce with cauliflower rice, petit filet with broccollini, turkey zucchini boats, salmon with sauteed mushrooms and spinach Cesar salad.
