We never get over the beauty of an autumn wedding at Spruce Mountain Ranch. On the menu: hors d’oeuvres ~ yellowfin tuna poke, artichoke dip in petite bread bowls, and bacon wrapped bison sausage. For dinner ~ boneless Colorado short ribs, wood grilled Scottish salmon, chai glazed sweet potatoes, and squash gnocchi. Dessert ~ mini fruit tarts, calamansi cheesecake savarin, milk & cookies shots and dark chocolate truffles!

(Part 2) Spit Roasted Picanha - cowboy crust, wild mushroom bread pudding, delicata squash. Passed Cowboy Cannoli - jalapeño, bison, white cheddar, jalapeño jam. Roaming Cart Tamales - brisket and poblano, avacado salsa, pipian, cotija, pickled onion. Local Maitake Mushroom - hot chicken style, dill ranch, pickled shallot. Texas Caviar - blue corn tortilla, cider vinegar. Frybread - charred venison, pickled blueberry.
