Moxie + Ginger Braised Brisket. A classic favorite for the cooler weather months. For the uninitiated, Moxie is the official state beverage of Maine. Dating back as far as its more popular contemporaries, Cola and Root Beer, this hidden gem of an old “health Tonic” offers a perfect balance of sweet soft drink and herbal notes. As a beverage it can be a pretty polarizing subject. But as an ingredient in our Brisket Braise it’s a perfect match with plenty of fresh ginger, garlic and thyme!

Cooking over a wood fire, right in front of your eyes! Nearly everything we serve is touched by the fire in some way and our wood grill turns triple duty as a rotisserie and also the sautée station in front of your guests. Nothing is cooked ahead of time and kept warm. Your meal will be served hot off the fires, directly to your tables!

As a caterer, we’re frequently reminding people about table space for a family style service. But spacious doesn’t have to mean sparse or drab. Little touches like linens, chargers and unique plateware can really elevate your table design to the more formal side (if that’s your jam!). And working with your florist, designers and planner to utilize tall, thin arrangements can add a lot of glamour to your tabelescape without costing valuable table space. Tell your other vendors that you are having a family style service! They all know what that means and can help to plan ahead.

Barn & Table is the premier caterer for Caswell Farm & Wedding Barn. Our custom approach to comfort food allows us to utilize the freshest ingredients, grown here on our farm, to produce seasonal flavors and beautiful presentations to craft a meal that is unique to your own story and traditions. We work closely with our Caswell Farm growers and our partners at The Bar Association to customize every detail from seed to plate and make your event as special to us as this beautiful piece of property we all call home.

Executive Chef Brian Kowtko believes that great food doesn’t have to be fussy or complicated. He brings us years of experience with some of Portland’s best caterers to make menu planning easy, approachable and delicious. Weather you choose an intimate rehearsal dinner under the custom lighting of our stunning barn or an elegant tented reception on the farm, our team is inspired by our unique surroundings to create an event that is rooted in a sense of place here at Caswell Farm.
