Brick Oven Porchetta. This Italian celebration specialty is a whole pork loin stuffed with garlic, fennel and herbs then wrapped in a crispy craklin’ skin pork belly. It is the definition of decadence and makes a great alternative to the traditional chicken, beef or fish any time of year. A total WOW factor!

New Kitchen, Who dis!?

You guys! It’s been radio silent over here for a hot minute. But for good reason! These past few weeks we’ve been putting the finishing touches on the Caswell Farm Commercial Kitchen & Classroom and we are soooo excited to be in it and putting it through the paces this weekend!

Not only will this space house Barn & Table right here at , but the Caswell Farm team has many great plans in the works to use it for a range of events from gardening and homesteading classes to tastings, dinners and more!

This time of year everything kicks into high gear here at . In the precious few weeks between the last of the snow and the first wedding guests there is just so much to get done! We take great pride in our growers and the amazing veggies and products they produce for your menus right here on the farm. Every season is unique and so every wedding is unique. Our Farm Tasting Chef’s Menu has been a huge success in getting the ingredients to your plate as they are at the peak of perfection and rooting your meal in a real sense of place right here on the farm. Thanks to everyone who has put the faith in our capable hands to produce stunning dishes with the best the farm has to offer every week. We can’t wait to kick into 2024!

Spring Weather has us thinking about florals! And thinking about florals leads us to thinking about centerpieces. And thinking about centerpieces reminds me it’s a great time to review Family Style service and tablescapes!

A vast majority of what we do here at is served Family Style, especially our Farm Tasting Menu format. These meals will arrive at your tables on larger platters intended to be passed around and shared, a lot like Thanksgiving Dinner. We think it creates an awesome way to let your guests remain seated at their tables without the stuffiness and expense that can sometimes accompany a formal plated meal service.

These larger platters mean some care has to be taken in planning table decorations and designs so our staff will have the space to set these dishes without crowding your tables. I’m always glad to field questions about this and help find solutions for a smooth service.

Simple designs, flat green runners, bud vases and votives are all IN! Things like elaborate floral centerpieces, candelabras, textured runners and board games (!! Yes we’ve seen it all!!) can pose some problems with space. We’re happy to help guide you, but letting your florists and designers know you are doing a Family Style Service is usually a great first step!

What would you plant in your garden?

It’s the time of year when our attention starts to shift to ordering seeds, plotting growing schedules and dreaming up menus for our guests. With our new Farm Tasting Menu, so much of what will be on our tables this season is dictated by the seeds we plant in the coming weeks.

Wood Fired. Nothing but a burning log. Cooking over a live fire is the foundation on which Barn & Table was built. When we started at five seasons ago, it was mostly out of necessity. How do we bring delicious dishes hot out of the pan directly to our guests? And how do we do it in a pretty remote spot without much access to electricity and gas?

The joy of cooking over a live fire is contagious and we quickly realized that we had created a kind of sideshow to our events at Caswell Farm. Never obtrusive, but always there. Painting the air with the smell of distant smoke. Offering a spot to take a break from the festivities and check out what’s cookin’. We love to meet your guests and answer their questions. We love to tell them “just wait, it’ll all come together on your table so soon”.

Pairing truly elegant dishes with a beautifully rustic style that really roots us in a sense of place next to the Old Barn. That’s the tradition we’re built on and the experience we can’t wait to give you. Cheers!

Desserts! Have you put some thought into dessert service for your event? We’re super excited to have Tish Smith () on our team and we’ve been working up a platform to streamline her offerings directly into your ordering process with ! From simple Petit Fours and Dessert Bars to custom Pies and Wedding Cakes, Tish’s experience has you covered! Reach out to [email protected] for dessert menu.

Tish and I go waaaaaaay back! Like embarrassingly far back. We first started working together right around 2000 in Orono and made fast friends. We went off on our separate paths, with hers leading her to many unbelievable positions in award winning venues and restaurants around the country. Most notably at Park City, Utah’s Stein Eriksen Lodge for the Sundance Film Festivals and then on to opening the Award Winning Friday, Saturday, Sunday in Philadelphia.

A fun loving Phish-Phan and native Mainer at heart, the opportunity to embrace her inner goofball and open her own gourmet Ice Cream Shop, , knocked and she accepted. But when the pandemic shut down the world, Tish knew it was time to get back home and be with her family in Maine.

I’m so grateful to have scooped her up and put her back in the kitchen with me as we rebuilt Barn & Table after the shutdown. I guess she likes the catering side of things, because she keeps showing up for more. And this winter we’ve been able to streamline her talents right into for good! This crew works hard and laughs hard, too. I say it every year, but I’m so blessed to get to work with you all every week. It’s not lost on me that no one has ever actually applied for a job here. We’re a team of friends, old and new, and somehow everyone has just stepped into the right shoes just when we needed them…whether we knew we needed them or not. Just wanted to take this beautiful photo of the hustle as an opportunity to sincerely thank you all for being with us and helping make this cool little idea a reality. Can’t wait to squeeze y’all!

Barn & Table is the premier caterer for Caswell Farm & Wedding Barn. Our custom approach to comfort food allows us to utilize the freshest ingredients, grown here on our farm, to produce seasonal flavors and beautiful presentations to craft a meal that is unique to your own story and traditions. We work closely with our Caswell Farm growers and our partners at The Bar Association to customize every detail from seed to plate and make your event as special to us as this beautiful piece of property we all call home.
