Meet Roman! 👨🏻‍🍳

Our very talented and passionate head chef at Tavern 1244—Roman has been with us since we first opened our doors on March 13, 2024, and in that time, he has become an integral part of our kitchen and our community.

Roman’s culinary journey began at Johnson & Wales University in Charleston, South Carolina. Since then, he has spent years gaining experience in nearly every corner of the restaurant industry. From washing dishes and busing tables to training staff and managing kitchens, Roman has seen it all. He has worked in a wide range of environments, including hospital cafeterias, resorts, hotels, bakeries, and corporate restaurants. This diverse experience has provided him with a wealth of knowledge about food trends, nutrition, and the intricacies of different culinary operations.

What Roman loves most about being in the restaurant industry is the energy. “It’s fun, challenging, and fast-paced,” he says. And while he enjoys all aspects of his job, catering and baking hold a special place in his heart. Roman’s culinary philosophy? “I love making people fat and happy!” We can’t argue with that.

One of Roman’s favorite things about working at Tavern 1244 is being part of a small, local community. “It’s great to be a part of the growth for the town of Greene,” he shares. Roman feels a deep appreciation for the family-oriented nature of our business, often describing Tavern 1244 as a “mom and pop shop” where his opinions are valued and his contributions are recognized. The most rewarding part of his job? Positive reviews, of course! There’s no greater satisfaction than knowing guests love the food he creates.

When Roman isn’t busy in the kitchen, you’ll likely find him enjoying his favorite outdoor activities. He loves playing sports like golf, frisbee golf, basketball, and snowboarding. He also enjoys riding his motorcycle, gardening, and caring for his chickens. And while Roman enjoys cooking at home on special occasions, he admits to indulging in some junk food now and then—ramen is a guilty pleasure!

As for his culinary preferences, Roman is especially fond of the Covered Bridge Sandwich on our menu. Not only does he love the taste, but he also has a personal connection to the name. “I’ve got a thing for covered bridges,” he says. “They take you back in time.” Roman has visited almost all of the covered bridges in New York and Vermont—impressive!

Roman’s advice for anyone considering a career in the restaurant industry? “It’s not for the weary, but it can be very rewarding. You can easily gain experience by putting in the time, and there’s always something new to learn.”

We’re incredibly grateful to have Roman as part of our team. His expertise, passion, and commitment to our community make him a standout chef and a valued member of the Tavern 1244 family. Meet Lizzie! 🌞

Lizzie is a multi-talented, busser, server, dishwasher and assistant to the event coordinator at Tavern 1244! Lizzie has been with us for 7 months and has quickly become an integral part of our team. Her passion for food is what initially drew her to the restaurant industry, and it shows in her dedication and love for the work she does.

One of Lizzie’s most memorable moments at Tavern 1244 was working an event for a local church. During the event, Lizzie had the chance to connect with the attendees and was even chosen to take one of their centerpieces home as a token of appreciation. The church group also sent a heartfelt card, thanking her for her help and expressing their gratitude for the event's smooth ex*****on and the exceptional setup.

When it comes to the menu, Lizzie has a favorite—the Tavern Pepperoni Flatbread! “It’s a refreshing take on a classic comfort food, and I can’t get enough of it,” she says.

Outside of work, Lizzie enjoys cooking, especially dishes like pasta and white chicken enchiladas. She’s also an outdoor enthusiast, always ready to hop on a four-wheeler, hike, or spend time with her dog Maddox. Spending time with her friends and family is one of her greatest joys, and she loves staying active and connected with nature.

Lizzie’s advice for anyone looking to join the restaurant industry? “If you have the opportunity to be trained in multiple positions, I highly suggest you take advantage! It’s a great way to learn, grow, and truly understand the ins and outs of the restaurant world.”
