Vegan or not? Seared dry pack Scallops on Curried Corn Purée-Vegan version Seared and Roasted Potato “Scallops”. Then Beef Tenderloin Medallions on Wild Mushroom Confit with Chimicurri , Roasted Fall Veg and Potato Celeriac & Leek Mash. Vegan version was Grilled Portobello. Was trying to be creative in honoring the vegans…How’d I do?
