One of our best sellers was our crustless quiche, both the spinach and mozzarella and the corn, bacon and cheddar. Rather than using frozen spinach we opted for sautéed fresh spinach early each morning. What set our corn, bacon and cheddar quiche apart was the fresh off the cob corn. None of that canned stuff for our friends. This recipe served as the base for all of our flavors. Please enjoy this and enjoy learning from us as you create your own flavors. 💝

If is still a thing, this is it. Fried Chicken Night was always our biggest night for what I refer to as “Getting Us Thru Covid Dinners”. I always thought my bakeshop would be a traditional bakeshop. Make baked goods. Sell out each day. Rinse and Repeat. Covid had other plans though. And I loved, loved, LOVED my Miss Malin’s Supper Club. Tonight I toast my fried chicken dinner to you. 🥂💗

I did it. I finally baked something for the first time in over a month. Baked something for the first time for my family in a VERY long time. I used to do this all the time. I used to LOVE baking. It was my therapy. I used it as a release and a challenge to look at a recipe and attempt to create and recreate perfection. And then I was crazy enough to turn it into a business. And the love was lost. I started to dread it and my family missed out on me and the homemade goodness. So here we are…after some time at home to think about what I want my life to be and what my days should look like…and I’m making the call to find my love of baking again by closing the bakeshop and focusing on my house and my family. Thank you to everyone who made this 2 year journey what it was. I loved getting to know my regulars and the interesting people who came to town if only for a short while. Each person has contributed a memory in my life and I am grateful. 💖 The catering side of Miss Malin’s Bakeshop & Catering will remain in business. The phone number and email address will remain available for contacting the business for catering. AND I will continue to share fun things I bake and cook on this fb page.
