It’s not official until Tuesday June 18, but today we celebrated Joshua’s 16th birthday!! I CANNOT believe how grown all my kiddos have become. I especially love Josh’s huge heart, playful personality, and work ethic.

We partied with a homemade, DELICIOUS fudge brownie ice cream cookie cake that was absolutely to-die-for. GREAT DAY all around with the fam-bam. “Blessed Mama” is an understatement.

Today I’d like to showcase one of my favorite Hangry Mama’s Kitchen menu items: Huli Huli Chicken & Pineapple Kabobs. 🍍🌺 Two pounds of tender, boneless chicken breast marinated in a homemade Hawaiian BBQ sauce and skewered with sweet pineapple, crispy bell peppers and onions. Hangry Mama’s fab bam is getting the gourmet sandwich treatment tonight!! No Ifs, Ands, or BUNDTwiches! Italian on the left; Club on the right. I’m a die-hard loyal Italian sandwich girl, but lemme tell ya: I make a homemade honey Dijon mustard spread for the Clubs… and I could literally SWIM in it, it’s that good.

Keep an eye out - I’m pondering adding a Cobb Salad variety to the BUNDTwich lineup: all your Cobb salad favorites - baby spinach, ham, boiled and chopped eggs, balsamic vinaigrette, bacon, cherry tomatoes, Gorgonzola - all on a crusty-on-the-outside-soft-on-the-inside sandwich!! 😋
Let me know your thoughts on this as a new menu item! It would not be served warm as the Italian and Club are.

FRIED isn’t the only way to enjoy fresh okra: sautéed, pickled, boiled, dehydrated (but I’ll pass), and … in a casserole!

This OKRA & RICE casserole is a true Southern Summer delight!! Fresh Okra, Veggie Trinity (onion, celery, bell pepper), garlic, corn, beef broth, and TONY CACHERE’S Cajun seasoning get things started.

French bread is sliced, brushed with garlic butter on both sides, oven toasted, then processed into the most decadent breadcrumbs.

A beautiful casserole comes together with a layer of basmati rice, okra blend, and garlic butter breadcrumbs.

Even my northerner husband loves it!! It’s not on my menu - I’m always gun shy to offer things too far outside the main stream - but let me know if you’d like to try my Okra & Rice Casserole!!

JALAPEÑO DIP: it’s a recipe of mine where, if I’m not careful, I can eat the whole thing in a sitting.

It’s not on my Hangry Mama’s menu, but I made it today for a customer in need of last-minute goodies to take to a pool party.

When asked my suggestions for a party dip, I hands-down said JALAPEÑO DIP!!

It is SO good. I’d like some feedback: would this be something I could provide for you in the future? Should I add it to Hangry Mama’s menu?

What other summer party recipes (or meal recipes, in general) would you like to see on the menu?
