I, David Guarnieri, have over 20 years of culinary experience working in many different facets of the industry, from restaurant kitchens to corporate settings. Starting something of my own has been a dream since the beginning. To me, cooking is as natural as breathing. I started cooking at a very young age with my gran

dmothers and parents. I followed in my brother's footsteps and entered the culinary world and worked my way up from bus boy to executive chef. I am very passionate about food and how it is prepared. I put my heart and soul into every dish. Seeing people smile after eating items I have cooked is one of the main reasons I love what I do. Top Cut is more than your typical catering company. What a great weekend. We had two weddings this Saturday and they wouldn’t have been possible with out our amazing staff. Thank you isn’t enough and most importantly . We did smoked brisket,shotgun shells, stuffed meatballs, steak tips, and chicken breast with all the sides for one wedding and the other wedding was cocktail hour with custom charcuterie boards, micro green mini salads, deviled eggs and cranberry chili meatballs. Thank you to for the amazing greens. We do all custom menus for whatever occasion.

1. Italian Scramble- Crumbled sweet Italian sausage, sauteed peppers and shallots, three seasoned scrambled eggs and served with breakfast sweet potatoes.

2. Steak Tips and Eggs- House marinated steak tips grilled over charcoal with sauteed mushrooms with three seasoned scrambled eggs, and roasted breakfast sweet potatoes.

3. Italian Herbed Chicken Drumsticks- Two drumsticks rubbed with fresh garlic, Italian herbs, salt, and pepper, grilled over charcoal with roasted sweet potatoes and grilled vegetables.

4. House Marinated Steak Tip Bowl- Hand cut marinated steak tips grilled too medium rare with roasted corn and roasted red peppers set on top of fluffy white rice.

5. Cedar Plank Smoked Shrimp- Shrimp seasoned with salt, pepper, garlic, and chili powder, grilled on a cedar plank, served with sauteed baby spinach, and roasted sweet potatoes.

6. The Veggie Bowl- Grilled onions, peppers, summer squash, zucchini and sauteed baby spinach, set on top of fluffy white rice and drizzled with a balsamic glaze.

7. Marinated Grilled Chicken- Chicken breast marinated in a homemade zesty Italian dressing and grilled to perfection, with roasted sweet potatoes and grilled vegetables.

8. Veggie Burrito Bowl- Roasted corn, black beans, roasted red peppers, onions, garlic and diced tomatoes, seasoned and sauteed together set on top of fluffy white rice with an avocado cup.

9. Grilled Salmon- Salmon marinated in a homemade zesty Italian dressing for 24 hours and grilled on a cedar plank served with sauteed baby spinach, and fluffy white rice.

10. Steak Tips over a Spring Salad- Marinated steak tips, grilled to medium rare over charcoal, set on top of a spring salad, baby spinach, blueberries, strawberries, candied pecans, and goat cheese.

1. Mini Protein Pancakes- Mini vanilla protein pancakes with smoked maple syrup, roasted breakfast sweet potatoes, and chicken and apple breakfast sausage.

2. Egg White Scramble- 3 egg whites scrambled with chopped tomatoes, sauteed spinach and crumbled feta cheese, with breakfast sweet potatoes and chicken and apple breakfast sausage.

3. Shrimp Scampi over Zucchini Noodles- Pan seared shrimp tossed in a garlic white wine sauce placed on top of zucchini noodles and topped with fresh parsley and Romano cheese.

4. Chicken Pesto Bowl- Chicken tenderloins pan seared tossed in a fresh pesto sauce and roasted in the oven, set on top of fluffy white rice and a side of roasted vegetables.

5. Beef and Vegetable Bowl- Thin sliced angus beef, tossed in a teriyaki sauce with julienned peppers and sauteed spinach over white rice.

6. Vegetable Pasta Toss- Roasted summer squash, roasted zucchini, roasted red onions, and roasted peppers all tossed in a garlic white wine sauce with fusilli pasta.

7. Pouched Garlic Lemon Salmon- Salmon seasoned with lemon, garlic, salt, pepper, and dill, pouched, and served with roasted sweet potatoes, and roasted vegetables.

February 21, 2022

1. Guido’s Egg Pie Omelet- 3 Scrambled eggs with sauteed spinach, roasted red peppers, Romano cheese, and chopped bacon, all mixed together and started on the stove top and finished in the oven, served with roasted breakfast sweet potatoes.

2. The Wife’s Breakfast- 3 sliced hardboiled eggs sprinkled with salt and pepper, diced kumato tomatoes tossed with balsamic glaze, garlic, salt and pepper, avocado cup, slice of multigrain bread, and a cup of everything but the bagel seasoning.

3. Bruschetta Haddock- Fresh haddock seasoned lightly with salt, pepper and garlic and fresh basil, roasted, and topped with a homemade bruschetta topping, served with roasted vegetables, and roasted sweet potatoes.

4. Flank Steak and Vegetable Bowl- Marinated flank steak thinly sliced and topped with a smokey chimichurri sauce, set on top of white rice and roasted vegetables.

5. Chicken Teriyaki Stir Fry- Chicken tenderloins sauteed in sesame oil with shredded carrots, fresh green, bell peppers, and red onion, and tossed in a healthy teriyaki sauce and set on top a bed of white rice.

6. Black Bean Burrito Bowl- White rice topped with seasoned black beans, roasted corn, chic peas, and diced red onion, avocado cup and drizzled with a taco sauce.

7. Mini Burger Bowl- Two seasoned mini burger patties, topped with caramelized shallots, with a side of sauteed broccolini and set on top of white rice and drizzled with a homemade BBQ sauce.

8. Winter Vegetable Stew- Turnips, carrots, parsnips, butternut squash and chic peas, in light tomato and cumin sauce slow cooked for hours and set on top of white rice.

4. Stuffed Sweet Potato- Baked sweet potato cut open sprinkled with salt and butter. Roasted corn, black beans, roasted red peppers, diced red onion all tossed with garlic, salt, pepper, fresh oregano, and red wine vinegar and stuffed into the baked sweet potato.

2. My Breakfast- 3 over medium eggs seasoned with salt, pepper, and garlic, with thick cut bacon, and breakfast sweet potatoes.

3. Teriyaki Glazed Chicken Tenderloins- Chicken tenderloins pan seared and tossed in a teriyaki glaze served with roasted vegetables and fluffy quinoa.

4. Sheet Pan Steak and Vegetables- Tender steak tips rubbed with salt, pepper, garlic and fresh herbs, vegetables tossed with salt, pepper and garlic and sweet potatoes all roasted together.

5. Roasted Pesto Vegetable Bowl- Summer squash, zucchini, red onion, and sweet peppers, all tossed with pesto sauce all set on top of a bed of fluffy quinoa.

6. Honey Dijon Salmon- Salmon marinated in a honey Dijon mustard marinade and roasted to perfection served with roasted vegetables and sweet potatoes.

3. Pan Seared Teriyaki Salmon Bowl- Salmon seasoned with garlic and pepper pan seared and brushed with a healthy teriyaki glaze and topped with fresh scallions set on top of fluffy white rice and sautéed baby spinach.

4. Bruschetta Chicken Tenderloins Bowl- Chicken tenderloins seasoned with salt, pepper, and garlic, pan seared and roasted in the oven, topped with diced tomatoes, garlic and fresh basil set on top of fluffy white rice with sautéed baby spinach.

2. Lemon Ricotta Pancakes- Small lemon ricotta pancakes topped with fresh raspberries and a side of chicken apple and sage breakfast sausage, with blackberry maple syrup.

3. Beef Stew- Tender chunks beef, with carrots, celery, creamer potatoes, fresh herbs and garlic in a savory red wine and beef broth sauce served over mashed potatoes.

4. Pan Seared Salmon Burger- Handmade salmon burger seasoned with fresh garlic, sage, oregano salt and pepper, pan seared and served with roasted sweet potatoes and green beans.

5. Kickin Chicken Tenderloins- Chicken tenderloins rubbed with a homemade spicy rub, pan seared and finished in the oven served with white rice and roasted green beans.

7. Espresso Fennel Rubbed Pork Tenderloin- Pork tenderloin rubbed with a homemade espresso fennel rub, pan seared and roasted in the oven, served with roasted sweet potatoes and green beans.

8. Vegetable Taco Bowl- Roasted summer squash, zucchini, red onions, chic peas, seasoned with a homemade taco seasoning, served over white rice.

9. Sheet Pan Gnocchi and Tomato Bake- Gnocchi with heirloom cherry tomatoes, and fresh mozzarella all tossed with olive oil, fresh garlic and herbs roasted and finished with a balsamic glaze.

10. Stuffed Peppers- Ground turkey, diced zucchini, white rice, tomatoes, and fresh basil in a lite tomato sauce, all stuffed into sweet bell peppers.

Top Cut Meal Prep Menu
Week of
January 3, 2022

1. Italian Scramble- Hot Italian sausage crumbled sautéed with shallots and green peppers tossed on top of three scrambled eggs, served with breakfast sweet potatoes.

2. Healthy Start Breakfast- 3 scrambled egg whites topped with chopped heirloom cherry tomatoes and basil, with chicken and apple breakfast sausage and breakfast sweet potatoes.

3. Pan Seared Salmon- Salmon seasoned with garlic, salt, pepper and fresh chives and pan seared and finished in the oven, served with sautéed broccolini and roasted sweet potatoes.

4. Cast Iron Steak Tips- Hand cut steak tips seasoned with salt, pepper, and garlic, cooked in a cast iron skillet with fresh rosemary, thyme, sage, oregano, and garlic finished with butter served with sautéed broccolini and roasted sweet potatoes.

5. Lemon Pepper Chicken Tenderloins- Chicken tenderloins seasoned with garlic and lemon pepper, pan seared and finished in the oven with fresh lemon juice, served with white rice and sautéed broccolini.

6. BBQ Cauliflower Bowl- Cauliflower rubbed with olive oil and a homemade rub and roasted then slathered with a homemade BBQ sauce, with roasted red peppers and sautéed baby spinach over white rice.

7. Garlic Pepper Shrimp Bowl- Shrimp dusted with salt, garlic and crushed red pepper pan seared and served with sautéed broccolini and white rice.

8. Winter Vegetable Bowl- Roasted butternut squash, parsnips, dried cranberries, and goat cheese over white rice drizzled with a black raspberry maple vinaigrette.

9. Turkey Chili- Sautéed onions, sweet potatoes, ground turkey and black beans in a tomato sauce seasoned with cumin, chili powder, garlic, oregano, and bay leaves, served over spaghetti squash.

10. Sautéed Vegetable Bowl- Summer squash, zucchini, roasted red peppers, and baby spinach, seasoned with garlic, salt, pepper, and oregano, set on top of white rice and drizzled with wild black berry maple sauce.

11. Oven Roasted Everything Bagel Salmon- Salmon seasoned with everything but the bagel seasoning, roasted in the oven and served with white rice and sautéed vegetables.

12. Pesto Chicken Tenderloins- Chicken tenderloins seasoned with salt, pepper, and garlic, pan seared and tossed with pesto sauce and set on top a bed of white rice and a side of sautéed broccolini.
