If you know, you know!

Tamales Gisu - Tamales Gisu is a local dish made of corn meal and masa harina (corn flour) but each half is flavored differently. The orange half is colored by achote (annatto) seed extract and flavored with meat such as bacon or chicken. The white half represents the “starch” portion of the tamale and has no distinctive meat-flavor. Unlike Mexican tamales, which are wrapped in corn husks, tamales gisu are often presented at the fiesta table wrapped in aluminum foil or banana leaves.

A variation of the more well-known Mexican tamale, this CHamoru version is characterized by its distinctive half white-half orange coloration.

A delicious, Chamorro traditional soft bread made with coconut milk, flour, butter and sugar.

We hope you all had a great holiday season!

We sure did, but bruhhh, 😩 we are so glad that it’s over so that we can get back to business!

‼️We will resume Saturday lunch plates but will only be doing them once a month so make sure you get your orders in otherwise you’ll have to wait until the following month to get your fix 😉‼️

The first Saturday plate of the New Year is gonna be 🔥🔥🔥🔥 and is set for January 20th! Keep an eye out for this one, it’s coming soon!

Hineksa’ Aga’ga’ (Red Rice):

Short-grained rice prepared with water colored from achote (annatto) seeds, which gives it its usually deep orange color and seasoned to perfection 👌🏽

We flew home late from San Diego and stayed up all night to prepare 25 lunch plates for the overnight receiving team at C&S 💪🏽

Food was cooked and delivered by 6:00 AM!

What other caterer delivers fresh cooked BBQ at 6 AM?!
