Reese's Peanut Butter Chocolate Cake
Ingredients:
* For the Cake:
1 box chocolate cake mix
1/2 cup oil
1 1/4 cup water
3 eggs (or as directed by the cake mix, adding an extra egg)
1 package (3.9 oz) instant chocolate pudding mix
* For the Peanut Butter Filling:
2 cups creamy peanut butter
2 cups confectioners' sugar
4 tablespoons butter, melted
* For the Chocolate Ganache:
2 cups semi-sweet chocolate chips
1 pint heavy cream
* For Garnish:
1 (8 oz.) bag mini Reese's peanut butter cups
Directions:
* Prepare the Cake:
Preheat oven according to the cake mix instructions.
Grease and flour two 9-inch cake pans.
In a large bowl, combine the cake mix, oil, water, eggs, and pudding mix. Beat until well blended.
Pour the batter evenly into prepared pans.
Bake as directed on the cake mix package or until a toothpick inserted into the center comes out clean.
Allow to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
* Make the Peanut Butter Filling:
In a medium bowl, mix creamy peanut butter, confectioners' sugar, and melted butter until smooth and creamy.
Prepare the Chocolate Ganache:
Place chocolate chips in a heat-proof bowl.
Heat the heavy cream in a saucepan over medium heat until it just begins to boil.
Pour the hot cream over the chocolate chips and let sit for 5 minutes. Whisk until smooth.
* Assemble the Cake:
Place one cake layer on a serving plate.
Spread the peanut butter filling evenly on top.
Place the second cake layer on top of the filling.
Pour the ganache over the top of the cake, allowing some to drip down the sides.
Decorate with mini Reese's peanut butter cups before the ganache sets.
* Serve:
Let the cake set for about 30 minutes to allow the ganache to firm up slightly.
Slice and serve.
