Shout-out to Jeff Nelson and Angela Bremal for booking us for catering this weekend this was the first time for the company to cater two events in one day. It was a challenge with the downpour however at the end of the day we are more than pleased to see all the happy faces... The day started at 7am and ended at 12pm.

One event was a sushi party at 2 and the other was at 7 on the evening menu lengua and pork asado tacos with sushi.

--------Mission Statement for 2020-------------------

I would like to share with you and everyone that has ever support this business/project since day one, The new “side hustle” Fuego: A Fusion Kitchen Catering project I’m launching. This page is going to convert into a new identity.

This is going to be a Chef inspired Catering service. 2020 has been a crazy year and before Covid -19 devastated the restaurant industry I was in the beginning stages of opening up a new location, however things don’t always work out the way you plan and for me I wanted to make sure it was going to be exceptional and better than the first location, this would be the only way I’d go through with it.

The new location to be… was supposed to be the place to have premium Latin Asian spirits and to have the big city vibe. Well amigos it did not pan out and that’s ok because there was a opportunity on the table for me to continue to work and manage as a single father at a place that would offer every other weekend off, a benefits package and insurance that is possibly the best I’ve ever seen or had. I took a humble pay cut and decided to work cook in health care after working over 20 years in the industry, I couldn’t regret much because of the way the industry was impacted, the change kept me afloat especially during March and April and so on. The Pandemic has changed the industry and everyone is scattering to figure out solutions and adapting.

If you had the opportunity to dine at the small place in Grant by the name of Fuego: A Fusion Kitchen when we were open you would’ve noticed that we did food/cuisine different and all across the board in the beginning serving dishes from all over different parts of lands, from street food to your traditional with a Latin flair.


When I decided to start the business I did not want to not get stuck doing the same things. I wanted to see what was out there and offer what wasn’t, I was new to the area and very very motivated, I knew the locals did not want to leave there area to get a good bite to eat all the time.
Fuego: A Fusion Kitchen was created after my run at the local Ridge Cider was bought by the De Voss Family, I acclimated as fast as possible and knew I needed a spot close by after seeing what buzz was created.

we opened in Grant in Newaygo County in the June, summer of 2017. It started as a dream to create a concept of having taqueria style tacos and Latin inspired sushi under one roof with a seasonal menu that would rotate 4 times a year.
There is a lot that I miss about cooking Chef inspired food since the business shut down , the moment just before a dish is served, the moment when you are so stoked and excited to see how patrons react to what is being put out and the challenges it takes to make sure that the staff is set up to pull it off.
When it does, it’s the most rewarding feeling and it’s a feeling I miss dearly.
In March 2020 I knew I wanted to do something independently, either starting the Fuego supper club where I'd be able to rent out a space and introduce a monthly five course to six course spread or catering that will allow me to be creative and to continue to cook my style and please the patrons of before or new.

I have now decided to launch this catering service for those that have absolutely no time to cook or desire to host a event/party/celebration of sorts. I’m creating packages for all types of events. I’m happy because I have events lined up and I plan on delivering one event at a time.

We are beginning to look for serious candidates to join our kitchen team. Fuego: A Fusion Kitchen is a concept project that started in 2016.

New age/traditional Sushi, traditional/Fusion tacos and seasonal preperations will be studied and worked in advance as we prepare for our new location. Everything that comes out our kitchen must be flawless.

Attention Newaygo County:

We at Fuego: A Fusion Kitchen have decided to temporarily close our doors till the rest of our kitchen renovation is complete.... Starting this week till further notice ,we are working hard to get the renovation done to the liking and aprroval of the state and health department.

We are on the plan review process a tedious one were u must state what you are doing with every square inch of the building and how many pieces of equipmemt is being used to run Fuego: A Fusion Kitchen.

We are working to get things back operating as soon as humanly possible. This has been a concept menu created by Chef Joaquin and no other resturant has two kitchen sections like Fuego and due to that, its going to be what its gonna be...it has to be perfect.

We will announce to you all our re-opening date as soon as possible. We want to sincerely thank you for your patience and for sticking with us. We will be ready and things will be smoother than ever after all this, keep in mind how much has been done in only one year and half of business with out alcohol and closing two times a week.
