Memoirs Catering is proud to partner with the brand new to bring an unforgettable experience on your special day. Kaimea Estates operates Oahu’s newest tier-1 venue and we are honored to be on the team. The estate property has an elevated ambiance and as a working farm we couldn’t be happier to be there.
From the top down the dishes shown are our ‘Ulu (Bread Fruit) Fries decorated with an herb oil, smoked paprika aioli and garlic truffle aioli.
Next, we have Chef de Cuisine John Betts preparing our ash crusted beef tenderloin, crispy kale, and heirloom carrots. Finished with a 7-day oxtail demi.

Finally, from the sea we bring a pupu that has layers of flavor complemented with even more layers of texture. Seared scallop, with a garlic and herb crust. Topped with house made hibiscus caviar.
