Memoirs Catering is proud to partner with the brand new to bring an unforgettable experience on your special day. Kaimea Estates operates Oahu’s newest tier-1 venue and we are honored to be on the team. The estate property has an elevated ambiance and as a working farm we couldn’t be happier to be there.

From the top down the dishes shown are our ‘Ulu (Bread Fruit) Fries decorated with an herb oil, smoked paprika aioli and garlic truffle aioli.


Next, we have Chef de Cuisine John Betts preparing our ash crusted beef tenderloin, crispy kale, and heirloom carrots. Finished with a 7-day oxtail demi.


Founder and Owner Chef Peter builds a new age favorite, flamed wagyu nigiri topped with herbaceous spring onion paste

Finally, from the sea we bring a pupu that has layers of flavor complemented with even more layers of texture. Seared scallop, with a garlic and herb crust. Topped with house made hibiscus caviar.

Tepache and Tequila

2 oz - Tequila Blanco
1 oz - House Tepache 75oz - Meyer Lemon juice5 oz - Cinnamon simple

What is Tepache?

Tepache is a fermented drink common to the Latin America’s utilizing the skin of pineapple. Combine sugar, water, and baking spices and let the natural yeast do it’s beautiful thing for 4 days, open ferment. Strain and bottle and one is left with a deliciously funky pineapple brew!

This Cocktail is the perfect concoction of funky tropical pineapple and tart with almost vanilla hints from the Meyer Lemon. When shaken with tequila the ingredients trigger an explosion of refreshing flavor. Liquid dynamite.

Enjoy this cocktail at your wedding or wow clients at your next corporate event or even up a private dinner with friends and family!

The 'Akana (Raspberry) Sour is our refreshing take on berry and herb, tart and sweet flavors. The balance between raspberry, ginger, and lavender kiss the line of tart and quickly joined by smooth and herbaceous basil.

This elixir is dangerous… dangerous in the way that thirst is quenched seemingly until the bottom is up, yet your tongue still salivates for another sip of complexity...

This refreshing Hennessy drink is a cocktail I came across in the “Bartenders Bible” by Gary Regan. Enjoy as easy sipper or a summer time banger. The hand squeezed fresh lime juice and almond sweetness of our house made orgeat balances the bold and smooth flavors of the spirit.

Enjoy this cocktail with us in any setting whether it be the party starter at a wedding or a paired course in a private dinner!

Memoirs bar program Bar Mana’ O would like to introduce to you a new line of libations that are sure to leave your taste buds as excited as we are. Original cocktails that will make you do your happy dance and salivate for another sip. These delightful riffs stem from proven cocktails with fun historical origins.

One such is the Clarified English Milk Tea Punch. You may have seen it start to pop up around the world in top craft cocktail bars all with their own delicious profiles, all part of the resurrection of arguably the tastiest and most unique style of cocktail. We are coming in strong with adding to this renaissance while paying homage to the local flavors of Hawai’i.

OAHU ‘s Milk Tea P U N CH

This beautiful drink is the happy marriage of tropical fruit and local coffee. Consisting of 14 ingredients steeped in rum for some time and then put through one the best scientific processes to emerge from the 1800’s! Milk Tea Clarification by means of which citrus,(spirit) and milk is combined together the proteins in the milk react and curdle. Once the curdles are filtered you are left with the silkiest decadent elixir that in our case is a clear amber ready to satiate the entire party. Enjoy a unique drink on your special day with friends and family or wow your clients with a drink that separates your event from the flock.
