One of the best parts of summer is fresh 🥒 from Solo Farms 🫶🏽

Before this season is over go grab some and make this mouthwatering Mexican Cucumber Salad for your favorite people!!!

*Mexican Cucumber Salad-ta•mal•ogy style*

3️⃣lg. cucumbers (seeded & diced)
1️⃣-15oz can of corn (drained and charred) (can sub. 2-3 fresh ears of corn)
1️⃣ med. red onion (diced)
1️⃣ bunch cilantro (finely chopped)
1️⃣-.8oz pkg Kinders Taco seasoning (w/chile & lime)
3/4 c mayo
5️⃣oz crumbled queso fresco
4️⃣ tbs lime juice

Char corn (or don’t). Dice all veggies and mix! It’s that easy!!!
